Fresh rolls
This is a recipe I come back to over and over again. I have mentioned about this famous dish many times in my articles. These fresh rolls can be eaten as appetisers before a main or served alongside other Vietnamese dishes. These summer rolls are simple but oh so delicious. Fresh roll with beef is derived from traditional Pho,wrapped with rice paper. Anytime we talk about Vietnamese cuisine, I bet Pho is always the first topic. Vietnamese people are so proud of Pho as the spirit of Vietnamese people. There are many kinds of Vietnamese pho I have introduced to you such as: chicken noodle soup, snail noodle soup, crab noodle soup, fish noodle soup, .. there are more than 30 different types of pho, but this is the only kind of pho in Vietnam without broth. . In particular, this dish can’t be lacked a bowl of sweet and sour dipping sauce (mixed fish sauce, sugar, lemon juice, garlic, chili, water, coriander). Fillings of the rolls including: egg, sausage, pineapple, tofu, carrot, lettuce and herbs. There are different versions of this dish, some people like to roll herbs with shrimp and pork; others like to wrap herbs with beef. So this dish can be customized to your taste and depending on the ingredients you have on hand. This dish provides a lot of fiber and is very healthy, the herbs inside will help enhance the taste of pho rolls. Eating fresh vegetables has never been this delicious!
I eat this dish often, especially in the summer, maybe about once a week. My family also love this dish, it's really cool. If I have time I will roll up the ingredients and put them on a plate, if I don't have time my family will have to roll these color fresh rolls by themselves.
Durian - my favorite fruit
I like to eat all foods made from durian such as: durian candy, green bean durian cake, durian ice cream, durian gruel,..As a child I found the smell of durian absolutely repulsive. As I grew up, I began to feel its great taste.
Some people say that durian smells like a dead animal or smells like rotten mushy onions hmm
Because of the short duration of tasty ripeness, durians are expensive. In previous years durian was the king of fruits and I rarely ate it, 7$ for a tiny piece of durian, it was quite expensive for me. In this year, the covid-19 epidemic caused economic recession, farmers can't sell durian and it's a cheap fruit this year lol 2$ for 1 durian. I bought many durians and ate them for days it was really fragrant and had a special taste for me. Feel creamy, not unlike a rich cheesecake of durian.
Jackfruit - my 2nd favorite fruit
I usually buy jackfruit and put them in the freezer, the taste is very sweet and addictive. Its sweet flavor like a combination of mango, pineapple and banana, has a good bite to it. I usually eat jackfruit with yogurt or ice cream, jackfruit is easier to eat than durian. But this fruit has hot properties, I recommended to eat jackfruit when you have an air conditioner lol because actually after eating jackfruit you sweat a lot.
Young mango - sour and crunchy
When unripe green mangoes are paired with a sweet, spicy and savory dipping sauce, it becomes a popular snack in Vietnam. The sour, fragrant scent of the raw, green mango is addicting.
