Sweet whey as an energy and protein source

The high volumes of whey produced worldwide annually, one third is lactose, therefore the sweet whey was considered as an inadequate and unusable waste product.

▶ Although sweet whey is a high source of energy and protein, it is intended as a supplementary input in pig diets.

Nowadays most of the companies do not have the necessary equipment for storage or pre-treatment, which in turn is directed into water bodies causing contamination and decreasing the physico-chemical quality of the whey.

This is why it is important to develop new products from sweet whey in order to reduce raw material costs and avoid further contamination of the ecosystem.

In response to this environmental problem, in descriptive compilations on the importance of sweet whey in the food industry, it has been mentioned that the development of new products from sweet whey represents the main alternative for the reduction of environmental pollution.

And in this sense, it stands out that the products of successful acceptance due to their low production costs, food quality and acceptable taste, are essentially soft drinks, fermented beverages, protein concentrates, lactose derivatives, among others.
