Summer Yogurt Bowl with Watermelon and Homemade Granola

in #food7 years ago (edited)

This easy yogurt bowl with homemade granola and yogurt is filled with all the healthy things you need to keep you fueled for a hot summer day. Though green smoothies remain our favorite breakfast, some mornings you need just a little bit more. That's when yogurt bowls come to play. But no worries, we'll have a green drink later, 'cause what a day without them.... yes we are that addicted to them and rarely let a day pass without one!

Don't forget to check out the 7-day Green Smoothie Challenge with SBD Prizes HERE. Let's get your family hooked too.

Ingredients (serves 2)

Homemade granola

1 cup uncooked old-fashioned rolled oats
½ cup raw unsalted mixed nuts, roughly chopped or whole
⅛ cup raw unsalted mixed seeds (or more nuts works too)
¼ cup unsweetened dried fruit chopped (optional)
¼ cup unsweetened desiccated coconut or coconut flakes
1-2 tablespoons maple syrup or honey
1-2 tablespoons extra virgin coconut oil

FYI: this recipe makes more than you need tp make breakfast for 2, but it can be stored in an airtight container for a few weeks.

For the yogurt bowl

1 cup (homemade) plain unsweetened yogurt or coconut yogurt
2 cups watermelon, cubed
2/3 cup homemade granola

FYI: to make your own yogurt (dairy and non-dairy), CLICK HERE!

Directions

  1. Preheat the oven to 300° F (150°C).
  2. In a bowl, combine all granola ingredients, except dried fruits, and spread them in one single layer on a baking sheet. Bake for 10 minutes. To make the granola extra crisp, grill last few minutes.
  3. Allow to cool and add dried fruits! Store in airtight container.
  4. Add watermelon to bowl. Top with yogurt and homemade granola.

Enjoy ;)

Have a great and healthy day (or for many of you night!)

Thanks for your recipe. I will try this.

looks delicious! thanks for sharing, I am going to make some overnight oats with fruit and yogurt for tomorrow!

Ohh yum! Love ON oats! To make it more like a pudding, ever thought of adding some chia seeds? I love that too! Thanks for your comment @jeffjagoe!

I usually add dried cranberries, maple syrup, cinnamon and assorted fruits and berries, sliced bananas are always one of my favorites!

Hmm sounds delish! Looking at and sharing food posts really makes me hungry! Last day of my 3-day coconut water fast!!!!! Looking forward to some food!

3 day coconut water fast?! that's some hardcore stuff right there! I couldn't do 4 hours without food haha

Hehe! It is strange to not eat, but ok! I have done fruit or veggies fast in the past... but this is different! Wanted to try it after reading the scientific benefits of fasting for 3 days. Normally it's water only but that sounded a bit too crazy so we did the coconut water fast! Post coming up later this week to share my experience!

Looking forward to it, that is some serious willpower! Happy fasting my friend, enjoy your solids tomorrow :)

This looks really nice and packed with the right ingredients to start off the day. Yummy yummy

Same here perfect summer fruit! You actually have a ....-trail of nearly every topic and these people will resteem posts they think are worth the to mention or share! You also have a channel on steemit.chat food-trail were you can post your links to recipes.

I tried to get on steemit.chat yesterday and it wouldn't work.
