Healthy Banana Bread

Banana bread is just one of those things that I LOVE for so many reasons! It's a great way to use up those over-ripe brown bananas (high-fives for less food waste!). It's also a delish treat that doesn't need to be loaded with sugar to feel like a treat! This bread is made with whole wheat flour for some extra fiber and nutrients. Butter/oil is substituted for almond butter for some healthy fats. PLUS... there is only 1/4 cup of honey to sweeten the whole loaf!

Here's what you'll need:

3 ripe bananas (the browner the better)
3/4 cup apple sauce
3/4 cup almond butter
1/4 cup honey
2 eggs
1 tablespoon vanilla extract
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups 100% whole wheat flour
1 cup dark chocolate chips

Here's how to do it:

  1. Preheat oven to 325 degrees.
  2. In a large bowl, mash bananas.
  3. Add the apple sauce, almond butter, honey, and vanilla. Mix until well combined, then whisk in the eggs.
  4. In a separate bowl mix together the cinnamon, baking powder, baking soda, salt and whole wheat flour.
  5. Add the flour mixture to the wet mixture, and stir until just combined. Then fold in the chocolate chips
  6. Line a loaf pan with parchment paper or oil all the sides with coconut oil. Pour the batter in and bake for 60-70 minutes, or until a toothpick comes out clean.
  7. Let cool, and enjoy with a little almond butter, ghee or just on its own!
    *** Crumble a handful of pecans or walnuts on top for a little crunch and some extra chocolate chips for a little extra chocolatey goodness!
