Beetroot Soup with Savoy Chips - Vegan Recipe

looking back at the past year on Steemit, I'd like to share today with you a very healthy, delicious and colorful recipe of a Beetroot Soup with Savoy chips.

Healthy Facts Beetroot contains a lot of healthy ingredients: Vitamin A, B and C as well as potassium, kalzium, magnesium, phosphorous and natrium.

Ingredients
Beetroot Soup
1kg beetroot
1 onion
200gr celery
Bunch of parseley
Sea salt
Pepper
Olive oil
Vegetable stock (biological)

Savoy Chips

Olive oil
Paprika powder
Curry powder
Sea salt
Pepper

Step-to-Step-Guide
Beetroot Soup

  1. Peel and wash the beetroots, celery and parseley.
  2. Chop beetroot in cubes (width of 2 fingers) and the onion, celery and parsley in very small pieces.
  3. Add some olive oil (ca. 2 table spoons) to your big pot and add chopped onions, beetroot and celery. Fry it for ca. 5 Minutes.
  4. Add 1.5 liter of water and chopped parseley to your pot. Season with sea salt, pepper and vegetable stock.
  5. Cook everything for ca. 30 minutes. Mash your soup a little bit, so that it gets creamy but some cubes are still left.

Step-to-Step-Guide
Savoy Chips*

  1. Take the leaves of the savoy and wash it very carefully.
  2. Wipe it out so it gets dry.
  3. Cut the bigger leaves in half and put them on a baking tray.
  4. Season savoy with sea salt, pepper, Paprika and curry powder and add carefully very little olive oil.
  5. Put it in the oven (200 heat) for ca. 20 minutes till they get crispy.

Your beetroot soup with savoy chips is ready to serve! This dish can be also served cold and is very delicious! Enjoy.
