New Recipe - German Semolina Soup *Grießnockerl*

Dear all,

In the next posts I will share with you some recipes from my home country - Germany.
All recipes I share with you were cooked in my very tiny kitchen in Berlin, so they are easy with no need of overpriced kitchen equipment and also affordable to cook!

Let’s start with one of my favorite German soups called „Grießnockerlsuppe“. It’s a very simple dish, which can be served either as main dish or in a smaller portion as a starter. Especially when it’s very cold or you have a cold, you will really enjoy this soup, I promise!

Ingredients
120 gr. Semolina
75 gr. fresh butter
2 fresh eggs
50ml milk
vegetable stock for 1.5 liter water
1.5 liter water
bunch of parseley
Salt

Step-to-Step Guide

  1. Start heating the water with the amount of vegetable stock for 1.5 liters in a big pot.
  2. Parallel take a little pan and start heating the butter till it melts. Add the milk and semolina and heat it for ca. 2 minutes, but do constantly stir everything up, till the mass gets thick and solid. Now take the pan from the heater and add the eggs. Stir everything up again.
  3. If your vegetable stock is cooking now lower the heat and take two little spoons to form little oval pieces of your semolina mass.
  4. Add the oval semolina cubes one after another in the heated vegetable stock and continue till there is now mass left.
  5. As soon as your last piece was add to your vegetable stock and appears on the surface of it, your soup is ready.
  6. To decorate it add a bit of fresh parsley on top of the soup.

Duration: ca. 35 minutes
Price for Ingredients: extremely cheap, ca. 4 Euros (in Germany)
