Meet Pad Thai Mustache Style.

This is the best Pad Thai in Chiang Mai, made by the hippest food stall chef in town!

Pad Thai is Thailand’s national dish. The basic version is made by stir-frying rice noodles with eggs, tofu and some spices.

This is the archetypical street food, with many food stalls serving just this dish.

Needless to say that the quality varies. I’ve had my fair share of bland tasting pad thais. So when I eat Thai food, I often prefer a curry.

But the exception to the rule is this cool food stall!

This post is an ode to Pad Thai Mustache Style.

Let me show you how Chef Mustache prepares a pad thai!

It all starts with the rice noodles, which are put in a cooking sieve.

Then the noodles are placed in a pan of boiling hot water.

As the noodles are being cooked, chef Mustache fries tofu in another pan.

Then he adds a few shrimps.

Stir it!

Next, he throws in some yellow spices. Not sure exactly which spice this is, but it looks like Turmeric powder!

Immediately after, two eggs are added.

All the ingredients are stirred together.

By now, the rice noodles are ready.

Let’s add them to the other pan!

Fish and soy sauce is added.

Chopped peanuts are sprinkled on top.

And then it’s time for what I assume is Chef Mustache’s secret sauce!

The stirring continues.

Now that starts to look like a Pad Thai!

Add some sprouts.

And some green onion.

Finished, let’s eat!

Wait a minute, not so fast…

I ordered mine egg wrapped 😉 . That one is even better than a regular Pad Thai!

A few eggs are mixed together in a bowl and then poured into a hot pan.

The pan is rotated gently, as the omelet starts to take shape and becomes more solid.

Now the Pad Thai is added on top of the omelet.

No plates here: the pad thai is served in a simple box.

It looks so delicious, but I'm allergic to shrimps. :( Can I try it with other stuff instead of shrimp? o.O Thanks for sharing. :)

Hi @tegoshei, yes you totally can!

The basic version is actually without any meat or fish, just tofu and egg. So you could try that. It is also quite common to add chicken.

I just personally really like shrimps in my pad thai. But you can totally try a version without shrimps, go for it!
