In case you haven't had enough Christmas treats yet, here's a versatile shortbread recipe with a few simple ingredients that will break just your belt not your wallet :-D
Ingredients
- 1/2 cup margarine (or vegan butter)
- 1/4 cup icing (powdered) sugar
- 1/3 cup Bob's Red Mill 1:1 Gluten-Free flour (or blend of your choice)
- 1/3 cup almond flour
- 1/3 cup cornstarch (or another starch of your choice)
- optional: pinch of salt, drop of vanilla
Directions
- Mix sugar into margarine and then flour until dough is formed.
- Press dough into cookies half-inch thick
- Bake @ 350 F for 15-20 minutes until just golden brown on the bottom. They will still be white on top when done. Let stand to cool
- Optional: dip cooled cookies in chococolate and place in refrigerator to set
These were really easy to make, just one bowl and a few scoops of ingredients. No melting butter, no measuring liquids, just a scoop of margarine, some flours, and icing sugar!
They taste fantastic, and the texture is just like I remember all my all-time favourite shortbread experiences in the past. Decadent, crunchy around the edges, sweet but not too sweet, and that characteristic shortbread texture.
I'm sure some people will substitute in animal fat (like butter) for the margarine, but this truly wasn't missing anything just the way it is. Yum. The combination of flours used ensures nobody will miss the wheat.
I wonder if butter would make better shortbread cookies, but the gluten-free flour in this recipe was definitely one of those better than the original. I think the sweet white rice in the Bob's and the almond plus the icing sugar really set it off and did the trick. I should've waited for the chocolate to harden for the full experience, but I just couldn't help myself! ;) They sure had that satisfying, nostalgic, melt-in-your-mouth taste.
I don't need chocolate. Shortbread is delicious on its own!

Ooh yum, at first glance I thought they were a version of the New York classic-- black and white cookie. Looks like an easy treat to put together. I think we're good on the Christmas cookies, but my family is going right into birthday season so I'll have to keep them in mind. ;)
Chocolate optional?! No way! They must be dipped in infused chocolate.
