Aloha fellow STEEMIANS!!
So, this is a dish that I am very proud of, as I come from Filipino descent. This is a traditional Filipino favorite, of which I've given my own touch of flavor and style of cooking, hope you will give it a try!
Chicken Adobo Recipe
Serves about 2–4 people as part of a meal | Prep Time: 5-10mins | Cook Time: 45 mins
Ingredients:
1/2cup (65 ml) soy sauce
1 cup (125 ml) white Filipino cane vinegar, or distilled white vinegar
6–8 cloves garlic, smashed with the side of a knife and peeled
1 teaspoon whole black peppercorns(or grinded)
4-5 bay leaves
6 skin-on, bone-in chicken thighs (which are my favorite)or wings and legs for more of an appetizer proportion😊
1.Place the soy sauce, vinegar, garlic, black peppercorns, and bay leaves in a large, nonreactive sauté pan, and then place the chicken thighs, skin side down, into the pan. Place this in the fridge to marinate overnight🌝
It's the next day now! Ready to cook dinner? Here we go!
- Pull your marinated dish out out of the fridge and place right to the stove. Bring the liquid to a boil over high heat, and then cover and simmer over low heat for 20 minutes. Turn the chicken over, and then cover and simmer for another 10 minutes.
- Remove just the chicken and broil the chicken in the oven until its almost crisp....this will also give your chicken a nice almost golden brown color.

- While the chicken is broiling, uncover the pan, and then increase the heat to high for about a quick minute and return the sauce back to about a medium heat. At this point you can add some water to taste(this will lighten the flavor.
Once you have a nice sear from the broil you can add the chicken back to the sauce for about 2 more minutes.
Serve over a bed of steamed white rice. Garnish with fresh or dried parsley.
