Succulent Lamb Shoulder with Veggies and Rice that will tantalize your tastebuds!! (Original Recipe and photos)

Hello Everyone in the Steemit Community!

I have made a delicious dinner for my beloved hubby - lamb shoulder with veggies and rice and thought maybe you guys might like to try it out at home if you're stuck one night and you're thinking that question that we ask ourselves about 10 times a day...."What am I going to have/make for dinner?".... Well! Try this one out if your keen :)

What you will need for the lamb shoulder:

  • 1 lemon (for juicing and lemon rind)
  • 1 dessert spoon amount of parsley
  • salt and pepper (add however much you like)
  • 1 dessert spoon amount of paprika
  • 1 desert spoon of mint
  • 8-10 garlic cloves
  • 1 teaspoon of Cumin
  • 1/3 cup of vegetable oil
  • 3/4 cup of water
  • garlic cloves
  • mint herbs
  • onions (you can also just put the onions in with the veggies)

What you will need for the Vegetables:

  • Sweet potato
  • potato
  • onions
  • tomatoes
  • eggplant
  • praprika
  • oil 1/4 cup
  • lemon (to juice over the veggies)
  • mint
  • salt and pepper

Now to bake! You will need -

  • 2 baking dishes
  • a metal rack if you have one


Method

Lamb Shoulder - carve lines across the fat and insertions big enough for garlic cloves - squeeze the lemon juice all over the lamb - add oil to lamb and dish - add salt and pepper - add paprika - add mint - add cumin - add garlic cloves - add lemon rind - add onions around the lamb - pour water into the dish


Method for Veggies

  • peel and cut up veggies to chunks and add to dish
  • add oil
  • add lemon
  • add salt, pepper
  • add mint
  • add water

Preheat your oven to about 250 degrees, once the food is in the oven turn it to 200 degrees and leave for about 45 mins then check meat and veggies, cover the meat with foil so it doesn't dry whilst cooking and turn the veggies. Leave in the oven another say 50 mins and then take it out. Sit the meat for about 5 mins before carving and serving.

Serve the lamb shoulder with either rice or salad.
