STEEMIT CULINARY CHALLENGE #13 Homemade Smoked Codfish Volcano on Beluga Volcanite & Sambal Olek Lava 📷>recipe guide<

Hi Steemians & Steemfoodies...After the huge success of my last 2 SCC contests, I would like to take my latest  creation into the race for #13! You can expect smoked fish volcanoes with black beluga lentils, homemade sambal olek and green salad.



Ingredients for 4 people:


Sambal

1 red chili
Coriander
1 red peppers
2 tablespoons of coconut chips
Juice of a lemon
10 grams of ginger
4 tbsp of honey
salt
Pepper (fresh)


Fish Volcanoes

1 white bread bun (from the previous day)
1 onion (small)
300- 400 codfish fillet (from sustainable fishing, eg with MSC seal)
1 organic egg
1 tsp mustard
30 grams of breadcrumbs
4 portions black beluga lentils
salad as desired


Preparation:

1. Chili halve, core & chop. Chop the coriander. Peel, rinse and finely chop the peppers.



2. Combine the chilli, coriander, honey and red pepper and season with lemon juice,  grated ginger , salt and pepper. Add the coconut chips and mix it well. Refrigerate.





Preparation:


1. Buns soak in milk for 10 minutes. Peel onion and chop. Rinse fish, dry, roughly dice. Now chop finley!



2. Mix the fish, onion, egg, milked bun, mustard and bread crumbs to a dough. Salt, pepper.





3. Form some volcanoes from the dough!



Preparation:

Now to the most important, the smoked! Place the wood for about an hour in water!


Heat your Grill and place the wood!



When the first smoke rises, place the volcanoes in the grill!




Reduce the heat, close the grill and wait for about 20 minutes ...ahh... in the meantime prepare the beluga lentils!


 



When the fish is smoked and the beluga lentils are ready put all on a plate and decor with the salad.





Enjoy it!

That much effort to smoke it makes me wonder what that tastes like! Codfish is my favorite fish and since you smoked it and since you made your sauce this way I'm craving for it now !

Good luck with your volcano! That black beluga sure gave that lava effect and so does the sauce.

Hi thank you @englishtchrivy ! The smoke aroma is different, depending on the wood and time but gives the fish a subtle subliminal note. Together with the coriander, the chili and the sweet wood honey ... very delicious!

Beautiful dish! Those leaves look so green and fresh I want to gobble them down never mind the rest of it!!!

This is so cool and very creative. Wish I had a grill like that.

Thank you @amy-goodrich but the grill is not something special, just the wood for smoking!

Well to me it is... we just have a few rocks and a metal wire rack that serves as a bbq or grill.. so this one looks pretty cool! But yes I should look for the wood too. My hubby loves smoked food.
