Homemade ramen soup\Hausgemachte Ramen-Suppe

Today we will make Korean ramen noodle soup. Although there are similar soups in Japan. I have a home average ramen. Classic ramen is much more difficult to prepare.
The base of the soup is salted soy paste and ramen noodles. The recipe is not the easiest one, you need certain ingredients. But you can find it in stores.

Ingredients:
● Ramen noodles -150-200 gr
● Soybean paste - 5 tbsp. (taste)
● Meat (fillet) -400 gr
● Carrots -1 pc
● Onions -1 pc
● Peking cabbage -1-2 leaves
● Soy sauce, fish or oyster sauce, ginger, soybean sprouts, pepper, herbs - to taste

1.The classic ramen soup is difficult and expensive to prepare, and therefore we will prepare an adapted version. I found an interesting vacuum ramen noodles. The trick of this noodles is that they are already cooked and you just need to throw them in boiling water, so we will add these noodles to the ramen soup at the end of boiling. Salted soybean paste is the main ingredient in many soups, including the famous miso soup. We’ll cook the miso soup some other time, but for now we’ll make the ramen.

2.We clean carrots from the skin, and onions from the husk. Cut the carrots into strips and the onions into half rings. Place the vegetables in boiling water. I took about 2 liters of water. I also dissolved soy paste here. It is salty, and therefore I will not add salt to the soup. But I will add fish sauce, it should be borne in mind that it is also very salty.

3.I plan to make meat soup, so I added 5 nice pieces of boneless loin. It is not too fatty, but very soft and tender meat. Can be substituted for chicken, turkey, beef or fish fillets. Add pieces of meat, finely chopped fresh ginger and cook the soup for about 20 minutes. Then add soybean sprouts and chopped Chinese cabbage. I confess that this time there were no soybean sprouts at hand and I replaced them with sprouted green buckwheat. Literally half a glass of sprouts. Cayenne pepper is responsible for the spiciness of the soup. Here for yourself, see what kind of hot spiciness you need.

4.All that remains is to put the ramen noodles in the soup and add the fish sauce to taste.

Serve ramen soup with cilantro. A very soulful soup, I was already sweating while eating. Such a rich taste!

Spices and soybean paste make the soup taste great, so the soup does not look like Pho or Tom Yam soup, although the ingredients are similar.

Heute machen wir koreanische Ramen-Nudelsuppe. Obwohl es in Japan ähnliche Suppen gibt. Ich habe einen durchschnittlichen Ramen zu Hause. Klassische Ramen sind viel schwieriger zuzubereiten.
Die Basis der Suppe ist gesalzene Sojapaste und Ramen-Nudeln. Das Rezept ist nicht das einfachste, man braucht bestimmte Zutaten. Aber Sie finden es in Geschäften.

Zutaten:
● Ramen-Nudeln -150-200 gr
● Sojabohnenpaste - 5 EL. (Geschmack)
● Fleisch (Filet) -400 gr
● Karotten -1 Stück
● Zwiebeln -1 Stück
● Pekingkohl -1-2 Blätter
● Sojasauce, Fisch- oder Austernsauce, Ingwer, Sojasprossen, Pfeffer, Kräuter - nach Geschmack

1.Die Zubereitung der klassischen Ramen-Suppe ist schwierig und teuer, daher werden wir eine angepasste Version vorbereiten. Ich fand interessante Ramen-Nudeln in einem Vakuum. Der Trick dieser Nudeln ist, dass sie bereits gekocht sind und Sie sie nur in kochendes Wasser werfen müssen, also geben wir diese Nudeln am Ende des Kochens in die Ramen-Suppe. Gesalzene Sojabohnenpaste ist die Hauptzutat in vielen Suppen, einschließlich der berühmten Miso-Suppe. Die Miso-Suppe kochen wir ein anderes Mal, aber vorerst machen wir die Ramen.

2.Wir reinigen Karotten von der Haut und Zwiebeln von der Schale. Die Karotten in Streifen und die Zwiebeln in halbe Ringe schneiden. Legen Sie das Gemüse in kochendes Wasser. Ich habe ungefähr 2 Liter Wasser genommen. Ich habe hier auch Sojapaste aufgelöst. Es ist salzig, daher werde ich der Suppe kein Salz hinzufügen. Aber ich werde Fischsauce hinzufügen, es sollte beachtet werden, dass sie auch sehr salzig ist.

3.Ich habe vor, Fleischsuppe zu machen, also habe ich 5 schöne Stücke knochenlose Lende hinzugefügt. Dies ist nicht zu fettig, sondern sehr weiches und zartes Fleisch. Kann durch Hähnchen-, Puten-, Rinder- oder Fischfilet ersetzt werden. Fleischstücke, fein gehackten frischen Ingwer dazugeben und die Suppe ca. 20 Minuten kochen lassen, dann Sojasprossen und gehackten Chinakohl dazugeben. Ich gestehe, dass diesmal keine Sojasprossen zur Hand waren und ich sie durch gekeimten grünen Buchweizen ersetzt habe. Buchstäblich ein halbes Glas Sprossen. Cayennepfeffer ist für die Schärfe der Suppe verantwortlich. Überzeugen Sie sich selbst, welche scharfe Schärfe Sie brauchen.

4.Es bleibt nur noch, die Ramen-Nudeln in die Suppe zu geben und die Fischsauce nach Geschmack hinzuzugeben.

Ramen-Suppe mit Koriander servieren. Sehr gefühlvolle Suppe, ich habe schon beim Essen geschwitzt. So ein reichhaltiger Geschmack!

Gewürze und Sojabohnenpaste lassen die Suppe gut schmecken, sodass die Suppe nicht wie Pho oder Tom Yam Suppe aussieht, obwohl die Zutaten ähnlich sind.

Mjam :-) schieht lecker aus. Würde ich gerne nachkochen aber hab nicht alke zutaten da. Kann man statt Soja paste auch Soja Sauce nehmen? Und welche Gewürze wären noch möglich? Petersilie vielleicht?

Sojabohnenpaste ist eine knifflige Zutat. Es kann nicht durch Sojasauce ersetzt werden. Aber Sie können asiatische Instantnudeln kaufen und einen Gewürzbeutel als Basis für Ihre Suppe verwenden. Sie können Petersilie, Koriander, Paprika, Paprikapulver verwenden.

I have such kind of instant noodles and like them too. But for sure that is nothing to compare with you soup :-)

I make my Ramen noodle soup from a package that costs 65 cent, and it takes 4 minutes... :)
But I admit, your's looks a lot better, and I assume it tastes better, too.

Instant noodles are pretty good. All Asia eats and enjoys it!)
