Indonesian Fried Noodle

Good Morning!

I broke a zucchini earlier, darn it. I was hand polinating a zucchini, and my elbow hit another. Le sigh 😕 Most of the plants are slowing down already, not just since its Autumn, but also goddamn powdery mildew keeps thriving regardless sprayed with either homemade or store bought sprayer 😵‍💫 At least my cherry tomatoes, peppers, and cucumbers are still going strong and with no problems at all. Crossing fingers!

We have been making all sorts of fried noodle, fried vermicelli, Indonesian style. Later in the day will be as well, am so happy. I live for noodle dish 😁 That being said, here is one that we had just yesterday 😍

1 large onion
6 garlic
1 bag instant stir fry noodles
Chicken bouillon powder to taste
Light soy sauce to taste
Sesame oil to taste
Oyster sauce to taste
Fish sauce to taste
Sweet soy sauce
MSG if using
1 bag of bokchoy/pakchoy
1 bag beansprouts
1 can mushroom slices
A bunch of green onion
700 g beef strips
500 g chicken strips

Drain mushroom and soak with beansprouts

Chop pakchoy and soak in water, separately from beansprouts

Thinly slice onion and bruise garlic

Boil the noodle for 3 mins, strain

Heat at least 2 tbsp peanut oil and stir fry beef and chicken strips, for 5-8 mins, then stir in garlic and onion, until fragrant then stir in pakchoy, cook for a minute or two

Add in noodle and seasonings, stir to combine then add in beansprouts and mushroom slices

When the flavor is good enough to your liking, stir in green onion and serve 😍

Elbows are the true garden bosses sometimes, sorry about the zucchini. I love that you bruise the garlic and soak the beansprouts with the mushrooms, such a smart move. With the sweet soy in there, do you ever finish with a squeeze of lime for a little pop. Weekend plan here is a quick market run for chilies and then a small noodle cookup later.

Yes! Sometimes we do squirt a little lime if not lemon 😊
