My 18 month old niece loves spaghetti! She eats pasta at least five times a week. I knew I had to show her parents a healthier alternative since she gets little to no nutritional value from her pasta. My answer was quite simple and easy: sweet potato noodles! I knew they would be a big hit since the child loves sweet potato fries, which are the only fries she has had.
They already had a Kitchenaid mixer so all I needed to do was get them the spiralizing attachment. This was easily the best $80 I have ever spent as I feel better that my niece is now able to eat veggie noodles. If you don't have a Kitchenaid mixer or food processor, there are alternatives. You could buy a Veggie Bullet or there are cheaper options that can spiralize as well.
The attachment was very easy to use and we were cooking the sweet potato noodles within minutes. They are easy to cook as you can sauté them on the stove or roast them in the oven. I found many great recipes online but I kept it simple and only used extra virgin olive oil and sea salt. The simplicity of my recipe did not keep my niece from enjoying them as she loved her veggie noodles! This was my first time cooking anything from scratch for a child and I was very proud of my accomplishment. It wasn't as much that I fed her last night, but more that her parents can make her healthier noodles in the future. That is why I'm the best Uncle!
Whether you have kids or not, I recommend everyone cooks veggie noodles instead of the traditional pasta. They are healthy and delicious!

Sweet potato pasta was a excellent heathy replacement for pasta for varies reasons.

Sweet potatoes are high in beta-carotene, vitamin A, vitamin B6 and vitamin C; fiber, thiamine, niacin, potassium and copper. They are also a good source of protein, calcium, vitamin E. Sweet potato digests slowly, causing a gradual rise in blood sugar so you feel satisfied longer as well.
@iseeyouvee comment is absolutely right. In fact if @themightyvolcano can add vegetable with it would have been a nice sweet potatoes. I too I love eating potatoes.

To be honest, I don't think sweet potatoes are much of improvement over pasta in nutritional value, I hope you're adding other veggies to the food as well.
