Teriyaki Cauliflower | NO FRYING + (No that's not chicken it's cauliflower haha)

Hey Everyone :)
Long time no post but I'll be talking about my absence in my next post coming this evening and it has some really exciting news!
Before that I did want to share this recipe with you:

Ingredients:
Cauliflower
Veggies you desire ( I used Broccoli, Mushrooms, Scallions and Bok Choy)
1 Cup of Spelt Flour
1 TSP of Onion Powder (or as desired)
3 Pinches of Salt ( or as desired)
Coconut Aminos Teriyaki (or desired sauce)

Directions:

  1. Preheat oven to 425
  2. In a mixing bowl add your spelt flour and seasonings, then add small amounts of water until the batter is like waffle batter in consistency. Also taste it to make sure you seasoned it according to how you want it.
  3. Take your cut pieces of cauliflower, I recommend small chunks so they are bitesized, and dip in the batter to coat.
  4. Then place your coated cauliflower on a parchment paper lined baking sheet and let bake for about 35 min.
  5. Once done baking add your cut veggies for the stir fry to a heated pan with water instead of oil, and cook those down a bit. Then add your sauce followed by the cauliflower bites then just let it heat up together really.
  6. We ate ours with quinoa and that's it!
