From Dull to Dullllicious Salad

Why are We Talking About Salads?

There are weeks you conquer the cooking game. Every night cooking a meal you look forward to having for lunch the next day. Then there are weeks you are out at social events, schmoozing, boozing, and avoiding all vegetables. These are the times you need greens. Your body craves the vegetables.

The easiest thing to do is grab a bag salad! But are you really stocking up on the fiber, potassium, and vitamins your body needs? You can achieve a well-rounded salad with a few extra ingredients.

Building Your Salad

I started with the "Spinach Cherry Almond Blue" salad kit. Start with whichever flavor is calling your name! It will certainly affect what you decide to add to the salad. I chose broccoli, garbanzo beans, and pickled beets.

  • Broccoli is full of vitamins, folate, and potassium
  • Garbanzo beans are a source of protein
  • Beets fight inflammation and keep blood pressure in check

First I rinse and mix my added ingredients (broccoli, garbanzo beans, and pickled beets).

Then I add the dressing and mix-ins from the bag salad.

I mix everything together until well coated.

To finish I mix in the greens.

The best part of making these salads is packing a mason jar for the next day. Start with the dressing at the bottom, then layer the rest of the ingredients. At lunch, shake the mason jar to coat everything then pour over greens. Simple!
