This pretty spring posy surprised me in my bathroom. Our house helper picked from our garden while I was working. It really perked me up because after my foot feeling much better by the end of Sunday, yesterday was another story. It was uncomfortable in bed, so I slept badly and yesterday was cold and there was a dull ached in my foot all day. Even thought it sat on a hot water bottle.
I was glad not to have to prepare much for supper. I'd done the hard work on Friday and it was in two jars.
Last night's meatfree Monday was a mostly market affair. Roasted butternut and lentil salad from the jar and Trish's fantastic tzatziki.
I nestled the salad (happily, I believe) in freshly baked pita breads that with the rest of the dough from last time and which I had stashed in the fridge. This time I got them right and didn't overcook them so we had the perfect pockets.
Although the salad is a meal on its own, the pita and the tzatziki took it to another level. To make it vegan, either drop the tzatziki or use a plant-based, lemon and garlicky substitute.
I've been asked for the recipe. I'll put them on the menu again and write it up. With, of course, the non-negotiable back story.
