Trying to perfect the pita

Last night was my second effort at making pita breads. Again, I made a full batch of dough but only four pitas. The other half of the dough is in the fridge for another meal.

Our Monday meatless meal was one of my favourites (The Husband not so much 😞😆). The heroes were my market pal Trish's falafel (which, truth be told, is what The Husband says he'd prefer not eating) and tzatziki with my hummus and fresh tomato, cucumber and onion. We had run out of lettuce...

For it to have been entirely plant-based, I should have forgotten the tzatziki.

Back to the pitas. I am learning that less is more. They really do cook quickly. Three minutes in the oven is all it takes. There's one left for my Wednesday lunch when The Husband is usually out and I am flying solo.

Perhaps, depending on how things go, I'll share my solo Wednesday lunch...on Thursday...

Because yum... want... and pitas as well. Great for so many things. And really expensive store bought!

I most certainly haven't bought 'em for years!

You know... a channel on this with inexpensive, healthy meals would probably really help and inspire a ton of folks after this "reset" ;)

It's in a book - an amazing vegetarian recipe book that my friend, potter and McGregorite wrote... I shall write another post with it...

Falafel now you are talking, and I do love a pitta bread, it is interesting that we say pitta and you say pita, pita for me is now PITA Pain In The Arse or Ass that everyone seems to be enjoying.

Nevertheless this looks fluffing delicious. Thank you for making my mouth water Fiona, I guess I should make some breakfast to stop this tummy grumbling!

Po-tay-toe, po-tah-to... hahaha! Having grown up among South Africans and with parents who had two different accents - Glaswegian and Oxford - I know all about this!

I had p-i-t-a for lunch...however you say it, it was good. Pic tomorrow :D (in time for your breakfast...).
