If it were regular, it would actually be vodníki. But we cannot type i after k (with a few exceptions, obviously) so the k here changes to c, which is not pronounced as k though :)

Sure, especially with Vodník you might be familiar with from Rusalka by Dvořák - although the one of his is rather grouch.

Vodníci - it's kinda irregular, like almost anything in Czech :)
