Creamy Fusilli Trio - Bacon, Spinach & Basil Roasted Italian Tomatoes

Often it is the simplest meals that end up being the most tasty! This was definitely one of those instances! I had quite a bit of spinach growing in the front of my house that needed to be used. I had been staring at it for days but kept forgetting to grab it, until the other day. It was cooler weather which is always great for pasta! I also had a whole bunch of Italian tomatoes to harvest, so decided to put the both of them to good use in a creamy bacon Fusilli dish!

I washed and chopped the spinach, separating the leaves and the stalks. The leaves I blanched for about one minute in boiling water, drained and set aside. The stalks, I decided to fry up with the two packs of bacon bits so they were still crunchy, but not "raw crunchy".

Once the pasta was cooked, I set put that into a serving dish, added the blanched spinach leaves as well as the fried bacon and spinach stalks and mixed it all up together.

I then made a simple white sauce by melting one tablespoon of butter, adding a half a chicken stock cube crumbled, a little black pepper, a tablespoon of flour and about a tablespoon of parmesan cheese powder. Mix that with a whisk until it becomes a smooth paste. Bit by bit you can add a full 500ml tub of fresh cream. Bring it to the boil, stirring consistently until it thickens slightly. Remove from the heat and set aside.

I then sliced the Italian tomatoes in half, chopped up some fresh basil and sprinkled that on top, along with some olive oil and placed then in the oven, closer to the top element at 250 degrees Celsius for about 15 minutes.

I never mix all the sauce in with the pasta as you will often find that the pasta and co. is a little too much for the amount of sauce you have made, which will mean that the end result will become sticky rather than saucy... so I generally take out the exact servings of pasta and then add the sauce so it is deliciously creamy. There is normally plenty of the pasta mix left over so you can always make a fresh pot of sauce when you serve the left overs - it is so quick to do and always nicer when freshly made!
