I only took two lemons to prepare my lemon pickle and now I'm regretting it!
This recipe is very easy but a little critical to make it perfect. You heat more, it will taste bitter; you boil more it, it will be lumpy. So I didn't take the risk to prepare a huge amount as I was almost sure I will spoil it. ha ha ha...I'm not a pro at making pickles, you know. But this time, I made it perfect!
Let's see what ingredients we need!
- Sliced lemon without seed
- Mustard oil
- Panch Foron (five Indian masala/spice)
- Hot spice powder
- Garlic 95 cloves)
- Turmeric and chili powder
- Salt and sugar
Let's see the process!
Boil the lemons for one minute on high flame and strain it.
Put a good amount of mustard oil in your pan. I took 200ml for two lemons. You can use whole garlic cloves or slice it, as per your choice. Put half a teaspoon of Five spices.
Don't cook it for over one minute, otherwise, it will taste bitter.
Now put the lemon in the oil, add salt, turmeric powder, chili powder, mixed masala powder, and cook it for a minute.
Add some sugar before taking off the heat.
The process takes only 5-6 minutes and it will be ready. The main thing is not to overcook/overheat the spices. We have to put the lemon in a glass jar after it comes to room temperature. And the lemon should be in the oil for another few days to make the pickle softer.
We enjoy it with rice and curry. it adds a chunkey, spicy taste to our meal. Loved it.
