Hola amigos de la comunidad @naturalmedicine y todos los que me leen, hoy traigo mi primera receta vegana con el fín de participar en el Plant Power Cooking Challenge, me enteré de este desafío por un comentario de @JustinParke en uno de mis post de recetas. La verdad es que nunca antes había cocinado algo totalmente vegano, así que fue un todo un reto para mí, pero la realidad superó mis expectativas y quedé muy contenta con el resultado. Acá les explicaré todo el proceso de este delicioso platillo.
Hello friends of the @naturalmedicine community and all those who read me, today I bring my first vegan recipe in order to participate in the Plant Power Cooking Challenge, I found out about this challenge by a comment from @JustinParke in one of my recipe post. The truth is that I had never cooked anything totally vegan before, so it was quite a challenge for me, but the reality exceeded my expectations and I was very happy with the result. Here I will explain the whole process of this delicious dish.

Lo primero que hice fue sofreír el arroz con aceite y ajo, antes de agregarle el agua para que me quedara suelto. Utilicé 1 cucharada de aceite y 4 dientes de ajo.

The first thing I did was to sauté the rice with oil and garlic, before adding the water to make it loose. I used 1 tablespoon of oil and 4 cloves of garlic.

Luego corté en pequeños trozos el cebollín, pimentón, ají dulce, y la zanahoria para sofreír con una cucharada de aceite.

Then I cut into small pieces the scallion, bell pepper, sweet bell pepper, and carrot to sauté with a spoonful of oil.

Cuando esto esté bien sofrito, agregan el arroz que hicieron en el paso anterior, pueden agregar un poco de onoto para darle color al arroz.

When this is well sautéed, add the rice you made in the previous step, you can add a little onoto to give color to the rice.

Hice una ensalada de lechuga, tomate, cebolla y pepino. Lo único que deben hacer es cortar en rodajas la cebolla, el tomate y el pepino y trocear la lechuga y lavarlas muy bien. Si es posible agreguen un chorrito de vinagre y las deja remojando, mientras hacen el resto de la comida. Cuando esté listo todo, sólo escurren y sirven.

I made a salad of lettuce, tomato, onion and cucumber. All you have to do is slice the onion, tomato and cucumber and chop the lettuce and wash it very well. If possible, add a splash of vinegar and let them soak while you make the rest of the meal. When everything is ready, just drain and serve.

No podía faltar un puré de papas (le agregué un chorrito de leche de soya para que me quedara cremoso), mis plátanitos fritos y berenjenas en rodajas fritas. El truco para que la berenjena no te quede amarga es dejarlas remojar por 30 minutos en agua fría con sal antes de freírlas. Recuerda secarlas con un paño de cocina, porque si al aceite le cae agua te puedes quemar.

I had to have mashed potatoes (I added a splash of soy milk to make it creamy), my fried plantains and fried eggplant slices. The trick to keep the eggplant from being bitter is to soak them for 30 minutes in cold salted water before frying. Remember to dry them with a kitchen towel, because if water gets into the oil you can burn yourself.

Y para finalizar, hice un batido de lechoza (papaya) con leche de soya para complementar mi delicioso platillo.
And to finish, I made a lechoza (papaya) smoothie with soy milk to complement my delicious dish.

Looks delicious! An excellent introduction to vegan cooking. Once you get the hang of it, you realize you can still get tons of flavor and so many variations of meals made just from plants!
