Hello everybody! Before I showed you my grilled cassava cakes, and now I want to show you all how to make cassava and tapioca pudding, and submit it for the @LotusShares Plant Power Cooking Challenge - Week #6. It’s easy to make eat but always delicious. This dessert is made from simple ingredients that are easy to find.

I think all countries have tapioca and cassava, is that right? Maybe some countries do not have them? I don’t know. All the countries that have tapioca prepare it very different from each other.

Ingredients

  • 1 cassava (about 500g)
  • 1/2 cup tapioca pearls
  • 2 cups coconut milk
  • 1 cup sugar or to taste
  • 1 tsp salt
  • 7 cups of water

Soak tapioca in water 5-10 minutes. Peel the cassava and wash it, then cut it like me.

Bring water to boil and add cassava, stir it and boil it until cooked. After cooked, add salt and sugar, stir it.

Add tapioca and coconut milk, then boil it again a few minutes. After taste, it’s ready.

I like to eat it a little bit hot but my husband likes to eat it cold.

I keep it in the refrigerator for him, and my two daughters like to eat a little hot and cold the same.

This dessert is our family favorite, and I cook it the most because it’s fast, has a lot of cassava, and it’s tasty too.

It sure is delicious.

@sreypov I love this dessert. I used to eat it when I lived in Singapore. One of the Hawker stalls near my apartment sold it, it was always cold and very refreshing from the heat and humidity. I am pretty sure it had fruit in it though and not cassava. This brings back happy memories for me.

I am now going to look and see if I can buy cassava here as this recipe looks delicious. I know tapioca is easy to find.
I am bookmarking this one too.

Much love to you beautiful πŸ€—πŸ’šπŸŒΈ
