For focaccia and baguette I proof dough without yeast for 30-60 minutes (is it called autolyse?) but not so long. I'm curious to make the time longer.

I haven't tried store bought sourdough but I must do so to compare the taste :) I buy sourdough bread from store some times and I think sourdough bread I bake has a bit stronger (nice, in my opinion) sourness. I wonder they add yeast too to make production effective.

Oh, that's what I meant, the finished sourdough bread, if it tastes better homemade than store bought. I don't think you can buy a starter but I could be wrong. I just don't imagine employees keeping one alive. ;)

Next time I make bread maybe I'll make a fae post about it! :D
