Good bread with sourdough

Now both of my wheat and rye sourdoughs are ready to be used for baking.

Rye sourdough could recover from hibernation but wheat sourdough didn't. So I made the wheat one again.

I baked a loaf of rye-wheat bread this morning with the rye sourdough. Even I used yeast together with the sourdough according to the recipe, it was different from fast rising yeast dough bread ... I was not much hungry but could eat slices of course with butter 😁🧈

Now I'm preparing wheat sourdough to bake a loaf tomorrow. The starter is nicely bubbly 🙌

It's all about taste ... but also I watched a documentary about gluten on a German-French TV channel "ARTE".

It seems letting bread dough proof for a long time has a good effect on bread taste and also on our body.

I look forward to coming back to sourdough baking during cold winter I mostly spend time indoor.


ようやくサワードウでのパン作りに戻ってきました。ライ麦のサワードウは冷凍庫での保存からうまく復活したものの、小麦のサワードウは復活せず、一から作り直しました。

どちらもいい感じにぶくぶくしていて、今日久しぶりにライ麦のサワードウのパンを焼きました。おいしいですねええええええ。あまりお腹が減っていなかったのにバターを塗ってもりもり食べてしまいました。久しぶりのサワードウのパンに味をしめて、小麦のサワードウのパンの準備を始めました。

先日グルテンについてのドキュメンタリーを見て、味だけでなく、サワードウなどで長時間発酵させる方が体にもいいようで、数時間で作るイーストパンと長時間発酵のパンとバランスを取りつつローテーションできたらいいなと思います。

まだまだ2、3ヶ月寒い日が続くのでパン作りに励もうと思います。

I've let dough proof a long time before just using yeast but I've never made sourdough. Does it taste better homemade than sourdough in the stores?

For focaccia and baguette I proof dough without yeast for 30-60 minutes (is it called autolyse?) but not so long. I'm curious to make the time longer.

I haven't tried store bought sourdough but I must do so to compare the taste :) I buy sourdough bread from store some times and I think sourdough bread I bake has a bit stronger (nice, in my opinion) sourness. I wonder they add yeast too to make production effective.

Oh, that's what I meant, the finished sourdough bread, if it tastes better homemade than store bought. I don't think you can buy a starter but I could be wrong. I just don't imagine employees keeping one alive. ;)

Next time I make bread maybe I'll make a fae post about it! :D

Ohnooooo what happened to your wheat sourdough (mine is much more stable than the rye one)? And its nice to read about baking again. I am so lazy with the writing, but made some nice breads too (yesterday with spelt bran and malt, was a first for me, but worked very nice) RIght now focaccia is proofing on the heater :-DDD
I will have a look at the arte documentary. Is it good?

Interesting. At my place eye is away more stable. I don’t know why it’s because of flour I use, my home environment, I cannot be a good friend with wheat sour dough …
And I look forward to reading about your bread. I just do routine baking (toast bread, bagel, brioche, nuts or raisin bread …) and want to explore recipes 😁

Yes, zu Tisch is lovely 😍 We inly saw some episodes, but liked it a lot.
May I ask which kind of wheat sourdough you have? I have a livieto madre (festen Weizensauerteig) and it keeps so long.. I sometimes do not fresh it up/make new one for 2 weeks and its still very triebstark. I send photo on Instagram (its easier for me) from the focaccia dough... I made it from I week old livieto madre (its baking right now)

Thank you for the photo! I didn’t know there are some varieties. I just mix same amount of wheat flower and water for example 1TL & 1TL, and add the same for five days. I’ll read about livieto madre ……. Ugh the name is so difficult for me and also for my phone 😂 I think I retyped it at least three times!

Yes, the recipe I followed was by German baker and the bread name is Mischbrot … 😁

I used to eat this type of bread all of the time in school 😅

I think it’s same for my partner and still he eats it a lot 😁 Probably German bread for him is something like rice for me 🍚

Mmm, I bought sourdough from a store yesterday - they claim the starter is 26 years old! 😂.

I can't write any more, I must eat bread with butter 😍
