A dinner at Chez Ablaze
This is a meal I cooked last week and sometimes when I cook a meal or moreso when I'm about to start cooking something, I think, hey, why not write up a Hive post about the recipe. So here I am!
In this case I was in Spain and we had decided to stay in for dinner, as the kids were tired. I almost always cook a chicken and chorizo dinner when we're in Spain.
Right then, let's get straight down to it, shall we?
@Ablaze's Chicken, Chorizo and Medley of Spanish Vegetables Pasta
Chicken
Chorizo
Lug of olive oil
Mozzarella cheese
1 Red pepper
Garlic
1 large red Onion
2 or 3 large tomatoes (or tin of tomatoes)
Pasta
STEP 1: Add a lug of olive oil to you pan. Slice up your chicken breasts and feynom a medium heat.
Turn your chicken and start cooking on the other side as well.
STEP 2: Boil some water and get your pasta cooking now. We'll get back to that later.
STEP 3: Next we want to chop up our chorizo and vegetables.
STEP 4: Now we can add our Chorizo as it's good to get this in early to infuse the flavours.
STEP 5: Next we add our chopped red pepper and mix everything together and keep stirring.
STEP 6: Now we're getting there, next up for the pan is our chopped onions, which get the same treatment. A good stir and continue to cook on a medium heat.
STEP 7: Chop your large tomatoes and add them to the pan
STEP 8: Now your pasta should be ready. Strain it. Wash off the starch with boiling water. Add some of the juices from pan to the pasta and mix together.
STEP 9: Now add your food from the pan to the pasta and top with cheese. Add a few bits of fresh basil if you have it.
STEP 10: Pour a glass of your favourite red wine.

It came together nicely now I must say. The photos don't really do it justice..
Looks delicious. Definitely something I would eat! I always forget that Spanish chorizo is different from Mexican chorizo. It's pretty rare to see it in a case here. They usually just grind it up and leave it loose.
I'm not sure if I've ever had Mexican Chorizo. I'll keep an eye out for it.

Cool man, that's pretty handy, I guess with your proximity to Mexico, some of the traditions and people cross over the border
Yeah, we are actually closer to Canada than Mexico, but there is still and influence here.
