To prepare the onoto oil we heat the oil, then we add the onoto seeds (it is also known in other countries as achiote) and when it begins to release its ink we turn off the fire; This preparation gives off a very special aroma that reminds me of my mother's and Aunt Carmen's kitchen, also at the time when we are preparing the Hallacas.
We chop the celery, garlic and chili peppers into small squares and fry them, then we add the ray and with a palette we integrate all the ingredients, if necessary we add a little of the water where we parboil the ray so that our preparation is juicy.
For this menu, we could not miss fried plantain, so that its sweetness caresses our palate.😋😋😋

I was going to prepare rice with carrot, but when I checked the fridge there were none, so I defrosted some yellow peas to add them.
