Introducing "Ginisang Kamatis with White Onion and an Okra Side Dish" - A Countrywide Favorite Dish

Greetings Foodies Bee Hive!

When it comes to food one of my many favorites is the "ginisang kamatis na may itlog" since I am young. "Ginisang kamatis na may itlog" is very simple and very easy to prepare yet it is a very delicious dish. It is easily one of the many favorite dishes here in the Philippines. This dish can be served any time of the day.

It also has many variants. You can cook ginisang kamatis without egg. You can cook ginisang kamatis with egg. And you can cook ginisang kamatis with egg and white/red onions.

All variants are my favorites because they are all delicious regardless of the variant.

Today, I am going to share the variant with white onions and egg, and with a very simple side dish (yet very delicious and nutritious).

I usually cook this dish by sauteeing onions and garlic. But this time I will be using a large white onion as the main ingredient.

If you ask me this is easily one of my all-time favorite dishes, hands down.

Here in the Philippines we always partner it with rice but you can eat it on its own.

Aside from okra as a side dish, you can substitute okra with fried or boiled eggplant (long or rounded eggplant), boiled sweet potato leaves, fried sweet potato, fried banana, boiled Malabar spinach, boiled spinach, boiled cabbage.

You can even add some green pepper to this dish for some added aroma and spiciness.

Not only that, if you don't want vegetables as a side dish you can certainly fry some fish. As for me, I always partner this dish with fried blue mackerel scad or fried milkfish (they also make a great combination).

And last but not the least, if you don't want fish or vegetables as a side dish, let's say you only got some pork and chicken on your fridge and you're being lazy to get out of your house you can definitely fry some pork (a Porkchop is great) or chicken as a substitute side dish.

By the way, you can also add more white onions as you wish that's how versatile this dish is. A 60% egg content and 40% white onions content is also great as white onions' taste is not overpowering just like the red onion.

And speaking of red onion, if you don't have white onions you can definitely use red onions if you don't have white onion readily available.

Slice the tomatoes into half

Beat the egg

Peel and slice the onion

Wash the okra

1. Boil the okra then set aside when cooked

2. Sautee white onion together with the tomatoes, set aside some white garlic for later use, add some salt

3. When the tomatoes start to get saucy add the remaining white onion

4. When the onion is about to be cooked add the beaten egg

5. Lower the heat, stir until you get this consistency and it is done

Add the boiled okra to the side then serve.

This must have been delicious, can the okra be peeled?

It is indeed delicious and as far as I know, you cannot or you don't need to peel the okra.
