Cantuccini Obsession / カントゥッチーニがとまらない

I have been making cantuccini crazily for the past month. It's easy to make with one bowl and fun to be creative to combine ingredients. It is good for me that cantuccini can be made so light with less sugar and oil. And I'm happy to see my family also likes it. So it is an ideal snack I bake at home 😊

I'm so happy to have it in my kitchen and see my daughter come back and fourth to snack it. Since it has less sugar and oil, I don't hesitate to give one or two to my daughter.

The making process is quite simple. Here is the rough recipe 👩‍🍳 The recipe is based on the cantuccini recipe from "Mainichi Oyatsu" by Shiho Nakashima, one of my favorite bakers.

Ingredients (20 cantuccini)

  • 1 egg or 2 table spoon apple sauce for vegan version
  • 40-50g sugar (Up to the amount of sweet ingredients. If you use apple sauce instead of an egg, also good to reduce some.)
  • 1 table spoon rapeseed oil
  • 100g flour (5-15% can be replaced by cacao, matcha, almond flour etc)
  • 1/4 tea spoon baking powder
  • 100g nuts and dried fruits (I usually mix them half and half)
  • Optional: herbs and spices as you like such as cinnamon, rosemary, cardamon, clove etc

Instruction

  1. Preheat oven to 160°C.
  2. Chop nuts and dried fruits if there are big chunks but don't mince them 😉 I like to leave their texture.
  3. Whisk egg and mix with sugar. Add oil and mix some more.
  4. Add flour and baking powder. Mix it roughly with a spoon.
  5. Add nuts and dried fruits. Mix it roughly again.
  6. Shape the batter in a log of 1.5cm high and 5-7cm wide.
  7. Bake for 15 minutes.
  8. Take it out from oven and let it cool down for 10 minutes (don't completely cool down as it becomes not easy to slice in pieces).
  9. Slice the log in 1cm width.
  10. Place the slices back on the oven tray with the cut surface facing up.
  11. Set the oven temperature lower (120°C for mine) and carefully let it dry for 30 minutes.
  12. Let the cantuccini cool down and done!

My favorite ingredient combinations

  • Raisin and almond (classic!)
  • Lemon, rosemary and almond
  • Cranberry and pistachio
  • Cacao and orange peel
  • Matcha and cranberry

 

It's a perfect biking or hiking snack too 🚲

この一ヶ月ほど、カントゥッチーニを作りまくっています。ボウルひとつで簡単にできて、具で遊べるのがたのしく(お菓子作り苦手な私でも3日に一度作るほど)、軽めでお腹にもたれず、どこにでも持ち歩けます。家族も喜んでもりもり食べてくれるのもうれしい・・・と私にとっては家で作るお菓子として完璧です。

大好きな料理家さんの一人、なかしましほさんの『まいにちおやつ』という本のレシピがもとになっています。大雑把なレシピを書きます。アレンジ自由自在です。

材料(カントゥッチーニ約20個分)

  • 卵1つまたはアップルソース 大さじ2
  • 砂糖 40-50g(ドライフルーツなど甘めの材料が多い時、卵のかわりにアップルソースを使うときなどは少なめが◎)
  • 菜種油などニュートラルな味の油 大さじ1
  • 小麦粉 100g(カカオ、抹茶、アーモンドパウダーなどを混ぜるときは5-15%を目安に同じ重量で置き換えてください。たとえばカカオ15g+小麦粉85g、抹茶7g+小麦粉93gなど)
  • ベーキングパウダー 小さじ1/4
  • ナッツ・ドライフルーツ 100g (私は大体重量で半々にしています)
  • お好みでハーブやスパイス少々

Instruction

  1. オーブンを160°Cに予熱する。
  2. ナッツとドライフルーツを荒く刻む(私は食感を残したいので刻みすぎないようにしています)
  3. 卵を溶いて砂糖と混ぜる。油を混ぜる。
  4. 小麦粉とベーキングパウダーを加えてスプーンでざっと混ぜる。
  5. ナッツとドライフルーツを入れて、もう一度ざっと混ぜる。
  6. 1.5cm厚、5-7cm幅のなまこ状に形を整えて、オーブンで15分焼く。
  7. オーブンから取り出して10分ほど冷まして荒熱をとる。冷ましすぎると硬くなって切りにくいので注意!
  8. 包丁で1cm幅にスライスする。
  9. 断面を上にして、120度のオーブンで30分ほどゆっくり乾燥させる。オーブンによっては100度ちょいでもよい感じで、様子を見てください。
  10. 冷ましてできあがり!

私の好きな材料の組み合わせ

  • クラシックなレーズンとアーモンド
  • 夏っぽいレモンの皮、ローズマリー、アーモンド
  • 色がきれいなクランベリーとピスタチオ
  • 秋冬のカカオとオレンジピール
  • 抹茶とクランベリー

まだまだいろいろ遊べそうです。

 

家で食べるカントゥッチーニもおいしいですが、紙袋にぽいっと入れてサイクリングのおともにもよいです 🚲 なんなら自転車に乗りながらでも食べられます。

今日は子供のお弁当に入れました。ドイツ弁当は作るのめっちゃ楽です w デコのデの字もなく、硬派な弁当好きな私はうれしいです。

That looks really good! When I worked in a bakery, I used to make something very similar looking to that, but it was called biscotti.

I’ve never heard of cantucci before. I’ll have to do a Google search and see what the difference is between the two.

It seems it's called Cantuccini in Germany. The Wikipedia page about Biscotti (English) is linked to Cantuccini on German one. Now I see why my browser makes red underlines under "cantuccini" 😁

The german name Cantuccini sounds like Italian so I mistook it as an Italian name ;)

From what I saw online, it is an Italian name. It sounds like cantuccini is the real name for that confection, and biscotti is the general name for cookie which often gets misused in America (and maybe other places) when referring to cantuccini.

I see. Now I learnt how to distinguish them 😁

I've never been fond of cakes and such even as a child. Well, except Walker's Ginger Biscuits](https://www.walkersshortbread.com/product/stem-ginger-biscuits/) sometimes! Ice cream? Maybe once a year, if I happen to have oranges/lemons, condensed milk and cream at home at the same time so I can make some. Chocolate? A cup of hot cocoa can be nice in winter, with a pickled cucumber sandwich to dunk, but eating chocolate bars? Nah, I leave that to my hubby 😹

I do love wine gums and really sour or salty candy though, but I seldom buy any since I'm just as happy eating falafels or a spicy tomato soup. And I used to drink tea with loads of sugar and milk, but not even that tastes good anymore, so I've switched to oolongs with very little sugar if any, and no milk. Or simply dissolving a tom yum stock cube in 800ml of boiling water! 😋

Interesting. I rarely put sugar in tea 😁 In Japan we mostly drink tea just as it is. Only in black tea.

Oh, of course milk and sugar only in black tea! Lapsang, Earl Grey, cinnamon and orange, cardamom flavoured... Though, there is matcha ice cream, so maybe milk and green tea isn't impossible? Hmm 🤔
