Nutritious Gardener's Salad

Hi Hive friends! It's been a long time since I've been on the internet, I just felt like I needed some time off. But that didn't stop me from gardening, cooking and baking.
As our days were quite hot this summer I had a refreshing salad on the menu most of my days.

I'm really grateful this year for the beautiful pink oyster mushrooms that I can use in the recipes.

Ingredients:

  • 500 g of new potatoes
  • 200 g of pink oyster mushrooms
  • 1 tablespoons of olive oil
  • 1 can of brown beans
  • 100 g of wild rocket
  • a fistful of basil and parsley leaves
  • 100 g of vegan yogurt
  • 2 tablespoons of olive oil
  • 1 tablespoon of white wine vinegar
  • salt and black pepper to taste

Preparation:

  1. Stretch the skin of new potatoes with a small knife and wash them. Boil them for 20-30 minutes or until tender.

  2. Clean pink oyster mushrooms and cook them on a hot pan with a bit of olive oil, just for a few minutes.

  3. Drain brown beans.
  4. Clean and wash the wild rocket leaves.
  5. Chop parsley and basil and mix it with vegan yogurt, olive oil, white wine vinegar and salt and black pepper to taste.

Oh yum! I don't know when I last ate oyster mushrooms. They are my favourite! Did you forage for those? Or plant them @blackberryskunk. Nice to see you here with your sensational dish. I've also been away

I've planted those. A friend brought be spores already ready to plant into straw or wood. I used straw at it seems easer, but I definitely wish to try it with wood too!
Sometimes we need time off the internet and that's totally cool actually! 😉

I think it must be like gold to have those items in your garden. This is a beautiful way to use these things especially those pink oysters. Last year I had them and saw them for the first time in my life. In fact I'm going to the little one day a week market to see my mushroom vendor and hope they have some pink oysters.

This would be a great salad in a vegan restaurant. I would definitely order this.

My garden is transitioning from winter to summer, so there are some nice new salad greens but also some older leaves which is not so nice for salads. Happy cooking!

Most of the greens this year here sadly got burned because of the drought. Looks like I need to start growing salad in winter too 😃

My absolute favorite is chickweed. It grows in the winter here where I am living and it is sweet and nice. I just love the flavor and to use it in salads. Best of luck! I am looking forward to seeing your posts on the winter salad creations.

I will plant some endive for the winter, it's tough enough to survive the snow.

Those winter snows are always the worst, at least I can imagine myself. We never have that problem as we have very mild weather year round. Best of luck!
