Eggplant Timbale with Neapolitan sauce

Hello food lovers!

One of my favorite vegetables is eggplant. It seems a very functional vegetable since it can prepare in many ways. Although by itself, it is a vegetable with a neutral flavor, eggplants can absorb the flavors of the other ingredients that can make up a recipe.

Today I went for a light and delicious dinner. I prepared some eggplant timbales. It is a quick preparation because, in 20 minutes, you have a delicious dish on your table. Besides, this dinner has all the nutrients your body needs. So without further ado, let's get down to work and prepare this recipe.

Ingredients:

2 eggplants
6 slices of mozzarella cheese
2 small tomatoes
3 eggs
3 tablespoons of wheat flour
1/2 cup Neapolitan sauce (tomato)
salt and pepper to taste
vegetable oil



Yields 4 servings

Step 1

Wash the eggplants and cut them into slices of about 1 centimeter.

Step 2

Place in a bowl the eggs and wheat flour. Season with salt and pepper to taste. Mix all the ingredients until you get a thick and homogeneous paste.

Step 3

Place each slice of eggplant in the batter. Coat each slice well and fry in oil.

Step 4

When both sides are golden brown, remove the eggplants and place them on a plate with absorbent paper.

Assembling the eggplant timbales is very easy. Place a slice of battered eggplant and then a slice of mozzarella cheese and tomato on top of it. Repeat this alternation of layers, and to hold the timbale, you can place a wooden toothpick, so it will not collapse.

Place the timbales on a plate and microwave for 1 minute to melt the mozzarella cheese. If you don't have a microwave, you can bake for 10 minutes at 180º C.

When serving this delicacy, place a couple of spoonfuls of Neapolitan sauce at the base of the dish. It is a sauce that will provide moisture to the preparation and complement the flavors. It is a recipe delicious and does not take long to prepare.

How many can you eat? You can eat as many as your body can resist. However, I was satisfied with two units. Remember that dinner should not be copious for can to sleep peacefully.
