Hello my dearest foodies of Hive!
I hope everyone is having a great weekend!
So yesterday I went together with my husband at his restaurant - It is not so often that I go over there as I have my 2 kids to take care of, Rheem and Omar!
Once I reached there, I went at the back to check on the different fruits, veggies, flowers and herbs that are mainly used in his restaurant!
I noticed that the starfruit tree was still quite full of Starfruits and there were still flowers blooming meaning we will get a lot of these yummy fruits for couple of weeks more.
We have different varieties of Starfruits in the island and this one is the sweetest varieties...even when they are green!
So I picked some of them and went in the kitchen to have a try at making starfruit jam!
It was my first time ever trying to make a jam with starfruits - I've only read about it from the net.
I simply washed the starfruits and cut in small dices as you can see below.
Then I added raw sugar, 4 pieces of cardamom and 1 cinnamon stick to the diced starfruits.
I put on fire and let cook on low fire for about 2 hours...the smell was just awesome!
Below is the results after 2 hours cooking...the fruits were soft and sweet as I wanted.
I took off the cardamom and cinnamon and kept the jam in a bowl for using tomorrow for breakfast on a nice toast as the flavor of the spice was just enough and I don't want it to be more intense.
So here we are my dear friends, a completely new recipe that I tried for the first time and I am so happy with the results.
Next time I will make much more and keep it in stock.
