Banana bread

Surely it has happened to all of us at some point, we have bought fruit or vegetables and we have not eaten them all, some remain in the fridge or in the fruit bowl, and begin to ripen, perhaps too much, so we have to eat them quickly because otherwise it will soon go to waste. We do not like to throw away or waste food, so a good idea may be to spark our culinary creativity and take advantage of those delicious foods and in a few minutes make a new improvised recipe, or inspired by another that we have been told, to be able to enjoy some product in another way.

It has recently happened to me with bananas, also as it is quite hot, all perishable products seem to last much less, and if we have enough quantity we do not have time to eat them all.

So with some very ripe bananas ready to eat as they are, I decided to make a different recipe, I didn't want them to end up rotting and having to be thrown away. With the banana bread recipe, which is actually almost more of a cake, or a hybrid between one and the other, we enjoy a new rich dessert.

What do we need?

  • Well, two or three bananas, very ripe, but still edible of course. It depends on what size they are.
  • A cup of flour. Better healthier avoiding wheat we can choose rice flour (if you don't have it you can directly grind rice) or oatmeal flour, almond flour, buckwheat flour, or this time I used coconut flour, not grated coconut, flour. Choose the one you want, but the coconut one, for example, you have to be careful and add a little less because it is denser and with more fiber.
  • Three or four eggs (also depends on the size).
  • Three large tablespoons of honey (or you can choose another sweetener, to taste, not much more because the bananas will already be sweet).
  • And a pinch of yeast.

Now simply mix well in the blender, if the mixture comes out very dense and is difficult to move to the mold, you can add some liquid, just a bit, a little water, or milk (vegetable milk for example, I put a little bit of coconut milk with rice that it had... ).

Ah, before putting the mixture in the mold, so that it doesn't stick later, with a kitchen brush, smear it with oil or butter. I have used coconut oil, like all coconut, with the banana. Very tropical style.

Nothing else, now baking time! Depending on the oven, but about 40 minutes at 180 degrees, and then take it out, prick it to see if it has cooked well inside, and let it cool.

Then you can eat it for dessert or at breakfast... how about spreading it with cream cheese or mascarpone cheese? Or with vanilla or chocolate ice cream. A thousand variants and good combinations to enjoy them. You just have to try!

This is fantastic. I plan to try it today. I think my baby will like it because she loves bananas and it will be a good way to feed her because she is always hungry 😀

Oh I hope she will like it!! The taste is nice, banana! It depends how much sweet (honey, etc...) you will add but at least she will be happy eating it! And also you and the rest of the family! 🤗🤗
