Have a bite with Fëanor - Issue #2

Hello fellow foodies!

Welcome all to my series "Have a bite with Fëanor" and enjoy some food porn!

Today i made a very refreshing meal, with some ceviche, rice with fish, and a nice tomato salad to go with it. All properly washed down with some Portuguese Verde.

Horse mackerel ceviche

I started by going to the market and get this guys here, they are not at all my personal favourite, still, good for ceviche, and a tasty one despite my personal preference, it was also the one that arrived today, having a friend to sell you fresh produce can go a long way...

First you need to debone the fish, there are many recipes on HIVE, i use lime, lemon, bell peppers, onions salt and vinegar. After you have it deboned the great part of it is done. I just squeezed the limes and lemons, some vinegar and salt and i put it aside for now.

I use the fish bones to make some broth i then use for the rice, it will make it tastier.

In the mean while i started with my onions and tomatoes for the rice so it would be ready in time to put the broth in.

Broth is good

Broth of anything you might anyhow dispose off, usually makes for great tasty dishes, i sometimes get asked about it and why bother making some broth that can really delay the whole thing, but in the end, what would you do on those 40 minutes or hour extra? Most times is all about planning it ahead.

After cooking the rice and using that broth and some parsley this is what it looked like.

Salads always

I have this never ending string of tomatoes coming my way this time of the year and i love them people who gift them to me, this are real ones not those from the store, i have 2 salads with them everyday no chance, truly marvelous this ones :D

In this meantime some hour or more passed and the ceviche looked pretty much done. I later put a bit of peppers on it and some hot and spicy olive oil i use with infused with some hot peppers inside :D That and the parsley make it really fresh.

Wine

We had this great wine from Ponte Da Barca, a small village in the north, this is also not my favourite wine, but i give it to them, it is for the purpose of eating fish and in hot days, a great surprise, very mellow endings but fruity and fresh all the way down, better have this one really cold.

All things considered ended up being a bit much, i really try to make it a spot on dose but i always make extra...

This is a pretty cool series you got. I should come visit you and you can make me some of it. Maybe then I will like it more than the ceviche I had down in Cabo.

Never been, but one reason why it might not be up to par is being warmer water fish, usually not the same consistency when they are from colder waters. this can make a tremendous difference on the final product you get from the sea. I am confident we can someday arrange this and you know i would have pleasure in doing so ;)

Quinta de Azevedo Reserva Vinho Verde 2017 - This seems good value usual 10 eur here, i think that one will grant you a superb experience very cool and with some seafood! Just never had that year in particual but i know those grapes you cant get any other place... Also a bit of arinto will grant it some extra magic!

Herdade Do Esporao Bico Amarelo - i would get this one for value sake, this place, Esporão, makes a lot of good wines with a no bs approach and good relation price vs quality. A good staple to have also cool always with some fish maybe, seafood is also a good companion.

Reguengo de Melgaço - This one is golden imo, usually the wines from Monção and melgaço are made with only one or 2 grapes unlike most Portuguese wines that get up to 4 types of grape for one wine, Anything you see with the grapes ALVARINHO and also ARINTO you are on a sure bet. I did not read all the grapes for each one, always keep in mind with this green one, Arinto will make for super fruity ends and Alvarinho is a sweet yet pungent grape that will refresh you on hot days! You cant go wrong if you buy from this DOC's and grapes!

Hell ye! Wine for me is not some thing you just drink i treat it like food, a integral part of the meal, hard to explain to others who dont really grow into it, i think some feel we are snoobish but it is like you said, i really respect this lots of centuries and work on this fine product :D

Yeah I am sure so many do attribute snobbish to wine, but once you have a great wine, there is no turning back. I keep my corks, and I can remember that particular bottle, and the night, even from a couple years ago. Also its really cool to be able to travel to a place without even leaving your living room :) !wine

Ok cool. And yeah I was excited when I first heard of the wine token, I thought it was going to be an actual wine community, but then found out it was just a token. Still pretty cool though. Everybody loves wine, and TBH it's surprising that there isnt that much content here.
