Food Fight Friday (done last night)


Day before yesterday, I pulled some diced pork from my freezer (thing stew beef but pork)
It had been in the bottom of my freezer for quite some while and was looking rather freezer burned.
So I thawed it, then brought it to a boil, but to begin with, being distracted by some stuff that had happened in my greenhouse, I turned on the back burner rather than the front.
This, before I noticed it, shattered my little ceramic dish I'd used for putting spoons and utensils on while cooking for year. Broke my heart as well.
Got it glued back together now, but not before gluing my fingers together in the process

So I boiled that meat until I was fairly certain any buggers that might have been in it were dead, with the last of the celery I'd had in the freezer, diced finely, with two sprigs of fresh rosemary.
Having leftovers I needed to eat, I put all that in the fridge until last night, when I added Cream of Celery soup, finely diced Yukon Gold Potatoes (boiled) and cooked some rice to go with.

I know, I know, you're not supposed to have all these carbs together; Rice with Potatoes?
But I'm from the south and we eat things a bit differently.
Mama kept her family alive through the Great Depression by using every crumb and stretching meals as much as possible. Grits, Rice and Cornmeal were staples.
My Grandma once commented "During the depression we at so much cornmeal the weevils nearly ate the seat of our britches out"
Sorry, I didn't think to take more pics as I went, cooking this pot and the rice.
It will last me several days at least.

I love to make mashed potatoes and combine them

Not sure I'd go that route, but in high school at lunch (and since then as well) I would mix Mashed potatoes with Garden Peas, made it a much more interesting "mouth" feel, bland white mashed P with bright green round peas, which were a tad sweet.

Sounds like a interesting and healthy combination!

I think so.
One of my older brothers, 9 yrs older than me, had a fixation about not letting things on his plate touch, let alone mix.
He would carefully rake his potatoes away from the peas, gravy on the meat had to stay on the meat etc...
He would be aghast at me mixing stuff the way I do.
Sadly, he died from burns he received while on active duty in Vietnam in 1966!

I am so sorry about you losing your ceramic plate.

But, mehn, that's a lot of carb... We can be forgiving because you've explained the root of your excessive carbs intake 😁

Hi @iskawrites , thanks for commenting, and I'm glad you got a laugh.

I don't really follow all this 'no carbs, all keto, watch out for gluten' dieting craze. I don't see it making folks more healthy, maybe a little bit lighter, but at what cost?
I could stand to lose a few pounds, but if I got out of my bed/house and DID something, I would probably lose those pounds without changing anything.

Still, I respect anyone's ideas for themselves.

Yeah. I completely understand. There are different ways one can lose those pounds. I guess it all boils down to what works for us.... Individually.
