The Thai fried prawn & pineapple rice,how to prepare it

This is a meal which is actually a quick, and also a low calorie food which is really perfect for a really good busy weekend....just ensure that you actually Cook your rice in an advance to really get ahead -make sure you run it under a chilled and cold water to be able chill quickly, then also able to freeze in a food bag for actually up to one month......

Ingredients which are needed includes a

1....2 tsp sunflower oil

2....some bunch spring onions ,

3...greens and whites which are separated, both should be sliced....

4.....1 green pepper ,which is been deseeded and have been chopped into some small chunks......

5.....140g pineapple which have been neatly chopped into a bite-sized chunks.......

6....3 portions of tbsp Thai green curry paste

7......4 tsp of light soy sauce , plus an extra to serve......

8....A 300g cooked basmati rice it could be brown, or white or a mix - it should be about 140g uncooked rice)

9......2 large eggs , and also a beaten
140g frozen peas.....

10....
225g can of bamboo shoots ,which has been drained....

11...250g frozen prawns , which is cooked or raw

12 .....2-3 limes , 1 should be juiced, the rest should be cut into wedges to be able to serve
handful coriander leaves is optional)....

Method

STEP 1

You have to first ensure that you Heat the oil in a kind of wok or a non-stick frying pan and also make sure you actually fry the spring onion whites for up to two minutes until it has become softened... The next thing to do is to actually stir in the pepper for up to a minute,then it will followed by the pineapple for also a minute more, then you will also stir in the green curry paste and also the soy sauce.

STEP 2
Now the next thing to do is to actually Add the rice, then also make sure you stir-frying until the piping hot, then you will then need to push the rice to be at one side of the pan and also ensure that you cramble the eggs on both the other side....

Then make sure you stir the peas, and the bamboo shoots and also the prawns into the rice and the eggs, then the next step is to actually heat all through for like two mins until the prawns have actually become hot and also when the peas tender. Finally,you will need to actually stir in the spring onion greens,also the lime juice and also the coriander, if using. Spoon into the bowls and also try to serve it with extra lime wedges and also the soy sauce.
