Puto With Pork Filling Recipe

Who's ready for today's dessert recipe? 😊 I'm introducing you all to one of Filipinos favorite rice treats — Puto. This delicacyis best consumed together with adobo or dinuguan. We usually have this one not just during festivals but even on regular Sundays as there are many folks who cook and sell like this one outside churches.

So what are we waiting for? Let's start our menu! ❣
INGREDIENTS:

Fillings:

  • 200 ground pork
  • 5 cloves garlic, minced - 1 small onion
  • ¼ cup soy sauce
  • ⅓ cup brown sugar
  • 1 cup water
  • 2 tsp cornstarch, dissolved in 1 tbsp of water
    ground black pepper
  • 2-3 tsp cooking oil

PUTO BATTER:

  • 2 cups All purpose flour (Remove 4 tablespoons and change with cornstarch or corn flour the removed quantity. ( This would act as a substitute to our cake flour but if you have available cake flour, use it instead of an all purpose flour and cornstarch.)
  • 2 tsp baking powder
  • 1 cup white sugar
  • ½ cup butter melted
  • ¾ cup milk
  • 4 medium eggs ihiwalay ang egg whites
  • ¼ tsp cream of tartar

FOR THE TOPPING:

  • 1 salted duck egg, sliced into strips - slices of cheese

Cook the fillings by roasting it. Sorry if I failed to take some photos during cooking procedure of the filling but I'll just state how to do it. Fry the ground pork together with its spices and season it well with our seasonings listed in the FILLING section. When cooked, let it cool and set aside. In a separate bowl, mixed all our dry ingredients and sieve it to remove the big particles. Then, let it sit.

Start beating the eggs. Separate the yolk from the egg whites and set aside the egg whites for the meringue later. In a bowl, mix the egg yolks, milk, and butter, then blend thoroughly and set aside.

Now let's make our meringue. Mix the tartar cream and the egg whites. Blend it for 2 minutes under low speed then switch to medium speed before proceeding to high speed until obtaining a soft peak stage just like how it looks like in the photo.

In a separate bowl, mix our dry and wet ingredients until fully blend. At this moment, we gained a sticky batter that looks like lacking in liquid but it's okay and normal for we won't need a watery batter as we need a cake consistency for a texture to be used in our Puto.

After combining our wet and dry ingredients, add our soft peak meringue into the bowl containing the wet and dry mixture. Use a spatula in blending it evenly and use the cut and fold method to avoid the bubbles from deflating. This is very important as it'll give an airy texture to our Puto. Don't pour the meringue at once to make the blending and combining of the batter easier.

After mixing the meringue into the batter and the mixture appears to be well-incorporated, start pouring the mixture into the Puto moulder and try to pour only by half.

After filling the moulder with our mixture, start to add our fillings at the center. Measure a teaspoon of filling but you can add more depending on your liking.

After adding the filling, pour an amount of mixture enough to coat our filling then sprinkle toppings on top. I desired to use salted egg and cheese for toppings.

Now steam the filled moulder for 20 minutes. Be sure to preheat the steamer before putting the moulders to avoid it from sticking onto the steamer's surface. Be sure to have a cloth to be used in covering the lid to avoid the steamed water from getting into the Puto that will become the reason of its undesired result.

Once the cooking time is done, let it cool for a minute before removing it from the steamer. It's better to utilize silicon molder than liners to prevent the hassle from getting the sticking liners from the baked goods.
