Greetings friends of hive and foodie, today I bring you a new recipe with protein and vitamins, and without the need for carbohydrates. These are delicious aubergines stuffed with meat and guacamole. The truth is that I continue to prepare healthy meals to maintain my health. It is quite simple to prepare this recipe; Take advantage of the fact that I'm keeping meat from lunch and prepare these eggplants for dinner. Here I will show you how to prepare them
Ingredients
- 1 large eggplant
- ground beef stew
- Avocado
- Onion
- Tomato
- Oil, vinegar and salt.

- I started by washing the eggplant very well and cut it in half.
Step 2
- Top with a little salt to taste

- Transfer to a cauldron to brown and soften the eggplants, which turn to brown on both sides.
Step 4
- The filling of each of the half of eggplant take them out with a spoon and reserve
Step 5
- With the ground beef stew, add the aubergine stuffing and cook for a while.
Step 6
- Place the aubergines on a tray and fill them with the ground beef stew
Step 7
- Put in the oven to finish cooking.
Step 8
- While they were baking, make the guacamole, taking the avocado and cutting it into pieces, as well as placing onion and tomato. To season place vinegar, oil and salt.
Step 9
- After 20 minutes remove the aubergines and cut in half, to serve
Already here list the eggplants and place the guacamole on top.

Saludos amigos de hive y foodie, hoy les traigo una nueva receta con proteína y vitaminas, y sin necesidad de carbohidratos. Estas son unas ricas berenjenas rellenas con carne y guacamole. La verdad es que sigo preparando comidas saludables para mantener mi salud. Es bastante sencilla de preparar esta receta; aproveche que me quedo carne del almuerzo y prepare estas berenjenas para la cena. Aquí te mostrare como las prepare
Ingredientes
- 1 berenjena grande
- Guiso de carne Molida
- Aguacate
- Cebolla
- Tomate
- Aceite, vinagre y sal.
Preparación
Paso 1
- Comencé lavando muy bien la berenjena y corte por la mitad
Paso 2
- Coloque encima un poco de sal al gusto
Paso3
- Lleve a un caldero para dorar y suavizar las berenjenas, la cual voltee para que se dorara por ambos lados.
Paso 4
- El relleno de cada una de la mitad de berenjena las saque con una cuchara y reserve
Paso 5
- Con el guiso de la carne molida, le incorpore el relleno de berenjena y lleve a cocinar un rato.
Paso 6
- Coloque las berenjenas en una bandeja y fui rellenando con el guiso de carne molida
Paso 7
- Lleve al horno para que se terminaran de cocinar.
Paso 8
- Mientras se horneaban, realice el guacamole, tomando el aguacate y cortando en trozos, además de colocar cebolla y tomate. Para aderezar coloque vinagre, aceite y sal.
Paso 9
- Después de 20 minutos saque las berenjenas y corte por la mitad, para emplatar
Ya aquí lista las berenjenas y coloque encima el guacamole.

If you covered/coat that eggplant with eggs, we have that dish called "Torta" which is apparently also a mexican cuisine. Not sure if it's the same.
Hello @konaqua , I have never prepared it with eggs, here in my country the eggplant is widely used in different dishes, even lasagna or pasticho are made. Actually the gastronomy of many countries is different. Greetings
What you did, if you cover it with eggs, is already another this called "tortang talong". Talong is eggplant in Filipino/Tagalog. Really tasty since the both complements even the texture. I never thought using the eggplant as the container or a bowl though. Might try that in our family reunion.
