Camping Holidays bring back fond memories of the sound of the sea lulling me to sleep while my Dad and four brothers are busily preparing their fishing gear and bait for early morning fishing, hoping to land the big one.
Beach sand everywhere is part of those memories but that's what camping by the sea was all about as a child.
I'd be off to dreamland feeling like I was still floating on those waves as I'd spend all day frolicking in the sea with my new found besties.
The menfolk would be off to the sea-waters with those funny headlamps they wore before the sun came up with Mom and me still in dreamland.
We would get up a little later to prepare breakfast after watching the awesome sunrise on the east coast of Africa from the camping site.
We would often pack breakfast and deliver it to them at their favourite fishing spot, because that was the most natural thing that womenfolk did for their men back in the day;)
Let's get Cooking! - Camper's Sausage Smash
What to make when you open the refrigerator and realize you'd forgotten to replenish the protein and all you find are two lone sausages and a handful of cheese, but thankfully a full tray of eggs and some veggies!
The Recipe
- 2 Pork Sausages, fried and sliced
- 1 Onion, diced
- 1 Potato, cubed and cooked
- 1/2 cup frozen Corn
- 1/2 cup frozen Peas
- 6 Eggs
- 1/2 cup Cheddar Cheese, grated
Brown onions in a little Olive Oil, add potato and stir fry to brown the little potato cubes.
Add veggies, stir and cook approx 5 minutes.
Pour beaten eggs into the pan, season to taste and stir fry till cooked.
Top with cheese when serving.
Gorgeous fruit in season currently, so that was added to the breakfast menu.
