Hive Creative Contest - GREEN Day Keto Friendly Dolmades

Green with envy is how I feel thinking back to the time when we were free to go wherever we wanted, without having nightmares about having forgotten our masks at home!

However, when it comes to food, we are blessed to still have plenty of health-giving GREEN foods and that is what I'll be showing you today.

The week gone by has been extremely difficult with my soon-to-be 90 year old Mom fracturing her ankle, and the only one who can help her is yours truly; so there's been very little time for cooking and baking.

I'm currently nursing a very sore back from all the lifting so sat down and started delving deep into my photo archives.
I found many many GREEN foods that I've shared in the past but stumbled across one that I overlooked; Low-Carb, Keto-friendly Dolmades/ Cabbage Rolls that I made when hubby was following a Keto diet.

I however will firstly take you on a trip down memory lane looking at a handful of GREEN foods; there were plenty more in my archives.

First up is the totally plant-based Broc-Cauli-Kale Fritters made with Broccoli, Cauliflower and Kale, all Cruciferous vegetables known for their anti-cancer properties.

Other vegetables belonging to the same family are Cabbage, Garden Cress, Bok Choy and Brussel Sprouts so make sure you eat plenty of these GREEN vegetables.

The Ups and Downs of Keto
Hubby followed a Keto diet for a couple of months a while back; lost that extra weight around the midriff and was feeling great; all the aches and pains that goes with getting on in years all but disappeared, BUT as he is a type one diabetic on Insulin, it was really difficult judging the amount of Insulin needed, so he often ended up having a Hypoglycemic episode, which anyone who is a diabetic or who lives with a diabetic, can attest to just how scary those are. I wrote a little about The Highs and Lows of Living with Diabetes a while back.

During that period, I discovered that one could actually cook really delicious Keto-friendly meals.
Here is a list of some of the allowed foods, none of which sound like the traditional diet food:

  • Seafood especially Salmon, Sardines, Mackerel and other fatty fish which all are high in omega-3 fats.
  • Low-Carb Vegetables which are high in nutrients like: Avocado, Cruciferous Veg, Green Beans, Cucumber, Lettuce, Asparagus, Peppers, Tomatoes, Zucchini/ Baby Marrow, Eggplant/ Aubergine and Olives.
  • Cheese
  • Meat and Poultry - the protein helps retain muscle mass.
  • Eggs help with satiety.
  • Coconut Oil provides a rapid source of energy.
  • Greek Yoghurt & Cottage Cheese both a healthy and filling snack.
  • Olive Oil - excellent for heart health.
  • Nuts and Seeds - not only helps with satiety but also reduces heart disease, certain cancers and depression.
  • Berries - not only delicious but also rich in nutrients.
  • Butter & Cream - great for cooking and baking.
  • Dark Chocolate and Cocoa Powder - a delicious antioxidant.

    Let's get Cooking! - Keto-friendly Low-Carb Cabbage Rolls

  • Large Cabbage leaves, left in boiling water till it starts wilting so it will not break up when rolling

Fill with:

  • Cooked Savoury Ground Beef or Lamb
  • Crumbly Cottage Cheese

Roll up tightly and pack into ovenproof dish.

Top with finely grated Cheddar Cheese and pop under grill.

Simpler you simply cannot find, and it was delicious and filling for the whole family!

Now I think I need a kale smoothie looking at all of that beautiful goodness. The cabbage rolls look so big an juicy. Marc's mother always puts mostly rice and cheap fake ground in it. I like the idea of mostly or all meat or meat substitute in my case. I must try that.

I really admire how you take care of your family. I'm not that good of a person. I think I would not handle it. You are a true saint and they are lucky to be blessed with you!

So sorry to hear about your mom. Injuries like that, at that age are never easy to handle. Hope she makes a swift recovery and that you get a little reprieve for your back.

Those fritters look so yummy, so does the quiche... in fact it ALL looks good. I have not had breakfast yet... can you tell?! Lol.

Awe thank you so much @jaynie, really appreciate the comforting message. Mom is fiercely independent so is finding this so hard, at least she's not in pain since the cast is on!
The danger with these falls is that Mom's brain tumour is so close to the brain stem, so we always heave a sigh of relief that she hasn't bumped her head!
At times like this I think of how you were there for your Mom, cannot begin to imagine the empty space that must have left in your life!
Have a great Sunday further, Durban is stinking hot at the moment, just awful!

My mom was the same, so I can very much relate to that attitude of independence. I cannot imagine the added stress of "protecting" a tumour - am sorry to read that, I was not aware.

Yeah, not a day goes by...
Cannot believe it is approaching one year in a couple of months.
And we just found out that my dad has throat cancer now too. I swear the universe seriously knows how to deal some blows!

Thankfully we are in for a cooler week ahead.

Oh man, that is bad and so true, whatever could go wrong is doing just that! I can't believe it's almost a year already.
My brother was also diagnosed with throat cancer and had to go for chemo and intensive radium treatment last year, I was so worried as he had to go to hospital during Covid! He's as thin as a rake, very weak but can eat again, and the good news is that the cancer is all gone. He took CBD Oil throughout the radium treatment and is still taking it, I believe that's also been a big factor in his healing!
Your Dad is in for a rough ride, must not give up though as another friend of ours also had it and is strong and well again.

MY glory, it just really never ends does it! Sorry that your brother had to go through all of that!!!! but VERY glad to hear that it has all gone! My dad has opted to have it cut out. The prof he has been seeing advised that over the radium treatment as (because of his age) it is only a one time thing, so a little like a "last resort" - should it ever come back again in any other form. so ya... might change his voice a little... but apparently a pretty simple procedure (so they say). I just hope that will be the last of it! The growth had not yet attached itself, so that definitely stands in his favour, but yes - time will tell!

Not a problem eating green, love all you mentioned it is a problem with some of the men in the house, but then you disguise yours so beautifully they would never know.

The low-carb cabbage rolls look similar to our dolmades.

I'd forgotten about them, will make it again.
