Hello everyone!

I had a long time without appearing here and I'm happy to write again for this nice community.

During this time I have done several things, like cutting my hair and making many desserts because I love them; among those a mango jelly that I made together with my parents a few weeks ago and it was delicious that I want to share with you today.

In the building where I live there are two giant mango trees and we took advantage of the fact that they were loaded and we took about 5 kilos to make the jelly. So here I show you the process:

image.png

3 kilos of mango
1 kilo of sugar
1/2 of kilo of papelón (panela)
1 tablespoon of vanilla.

Boil the mango until the shell opens and let it rest until it cools down.

Peel and scoop out the pulp with a teaspoon. SAM_7591.JPG

After that process, strain out all the pulp preferably, although in this case I had almost no lint.

Transfer to a saucepan and add half the sugar and all the vanilla. Integrate everything with a paddle and cook over high heat until boiling. It is important to stir constantly to avoid sticking.

When boiling vigorously lower to medium heat, add the remaining sugar and the chopped or grated papelón. Stir constantly until all the papelón is dissolved.

Cooking time is approximately one hour.

Then wait for it to cool and then taste this rich dessert. At my house everyone loved it and it lasted us a bunch, we even shared some with some neighbors and family.
