Arroz con Maní y Perejil / Rice with Peanuts and Parsley

in Foodies Bee Hive4 years ago

Hello everyone, how are you? Today I want to share with you this rice with peanuts and parsley, which makes a perfect contrast as a side to almost any dish that has very intense flavors, such as the coconut milk curry that I published before.

Due to its intense nutty flavor in addition to the freshness of parsley, this dish can also accompany other recipes such as a chicken strogonoff or dishes with many flavors such as a black roast, which is not the most traditional, but it is very good!

Ingredientes / Ingredients:

  • 250 gr de Arroz Blanco / 250 gr of White Rice
  • 500 gr de Agua Filtrada o Caldo de Vegetales / Filtered Water or Vegetable Broth
  • Media Cebolla Pequeña / Half of Small Onion
  • 2 Dientes de Ajo / 2 Garlic Cloves
  • 200 gr de Maní, sin concha / 200 gr of Peanuts, without shell
  • 2 Manojos de Perejil / 2 Parsley Bunches
  • 2 Cucharadas de Mantequilla / 2 Tablespoons of Butter
  • Sal y Pimienta, al gusto / Salt and Pepper, to taste

Preparación / Preparation:

1- Empezamos preparando el arroz / We start preparing the rice.

The main thing here is to make a simple rice, since we want the star of the dish to be the nutty flavor, which will be given by peanuts.

We start by cutting the onion into small squares and the garlic cloves as small as possible. In a pot with a drizzle of oil, first sauté the onion and when we see that they are already translucent, add the garlic.

Now it is the turn to add the rice, let it cook for a few minutes so that it toasts a little and release its flavor better, be very careful not to burn it.

We continue adding the water or the vegetable broth. As a more subtle flavor I think it would be the only time I would not recommend using a beef or chicken broth.

I am not very expert at making rice, so I cannot live without my rice cooker, but here I use two cups of water for every cup of rice. As soon as the water begins to boil, I turn the flame to a minimum and cover the pot so that the rice cooks well.

While we wait for the rice to be ready, we can continue cutting the peanuts into smaller pieces and cutting the parsley into very small pieces. I used Creole parsley, which is a variant of the common one we know, its leaves are very small but they have a much more intense flavor, and we have it planted in our garden, jajaja.

Don't forget to add salt to your liking at this stage, as no one likes rice that is too bland.

Once the rice is ready, it is soft and all the liquid has dried, we let it rest until it cools a little.

2- Ahora a integrar bien todos los ingredientes / Now to integrate all the ingredients well.

We start by melting the two tablespoons of butter in a pot a little bigger than the one we made the rice in, and then adding the chopped peanuts.

We leave the peanuts for a few minutes to release its aroma and then we add the finely chopped parsley. It should not be long between this step and we add the rice, so that the parsley does not burn.

DSC08245-01.jpeg

When adding the rice, leave the flame for a minute or two, what we want is to heat the rice and integrate it with the other Ingredients, since if you leave it for a long time we can overcook it, with the result of a very dry and hard rice.

DSC08246-02.jpeg

Una vez finalizado todo esto, ya estaremos listos para servirlo y disfrutar / Once all this is finished, we will be ready to serve it and enjoy.

The first thing we will notice is how aromatic it is, and when combined with another dish with strong flavors, it will mix very well, helping us to feel each of the flavors more easily, although by itself it is also very delicious.
