Catfish grilled with turmeric and dipped ginger sauce

Hello all my friends!!
This is my first post in the Foodies bee here community. I am overjoyed to be able to learn and share cooking skills and delicious food in this community. Cooking brings me joy and fulfillment. I enjoy preparing a variety of delicious and nutritious meals for my family and watching them eat well. This is the first time I've made the dish I'm sharing today, but the results are fantastic. I would like to invite you to collaborate with me.

Why do I prepare this dish?

My neighbor returned from fishing, having caught a large number of fish. This generous neighbor shared his catch with the neighbor, and he gave me two catfish.

Do you know what catfish is?

  • This is a freshwater fish, often living in muddy ponds and ditches where the oxygen content is low. Thanks to the special respiratory structure, catfish can breathe air.

    In 100 gr,Catfish meets 39% of the daily protein requirement. Omega-3 fatty acid
    Vitamin B12 content is high
    It contains a variety of amino acids, vitamins, and minerals that the body requires.

Ingredients needed to prepare a meal for three people

700gr catfish
100gr fresh turmeric
1tsp salt
2tsp fish sauce
1tsp sugar
50gr citronella
10gr small onion
2 chillis

  • Dipping sauce
    5gr ginger
    1 chilli
    2tsp sugaralli
    50ml fish sauce

  • Vegetables served with the main dish
    Salad, Lettuce, bean sprouts, basil, banana's follower, a little of everything.

  • Rice -paper

Preliminary processing of fish

  • Remove the catfish's gills, fins, and head

  • Remove all catfish intestines

  • Rub in the granulated salt until the catfish becomes slimy.

  • Wash catfish
  • The trick to cleaning catfish is to use bamboo leaves. Hold the bamboo leaves and swipe them along the catfish's body; the slime will follow.

  • After that, wash the fish many times to clean the slimy
  • Continue to cut littel the fish to allow it to absorb the seasoning better, making sure to cut both sides of the fish.(

  • Place the catfish in a bowl and marinate them.

Marinate catfish

  • Slice fresh turmeric and lemongrass

  • Grind the turmeric, lemongrass, chili, and small onion in a mortar.

  • Add fish sauce, salt, sugar and the above mixture to marinate the sturgeon for 30 minutes

Grilled catfish

  • Place the lemongrass, chili, and turmeric mixture on the catfish's belly so that it doesn't burn while grilling and makes the catfish more fragrant.

  • Place the catfish in an oil-free fryer and set the first heat to 160 degrees 20 minutes after it is slightly golden.

  • Prepare a cup of turmeric oil and spread it on the fish body, then turn over and bake for 15 minutes more at 160 degrees.

Make dipping sauce

  • Grate the ginger.

  • Combine chili, sugar, and lemon in a bowl.

  • Finally add fish sauce to the bowl. Finish a perfect dipping sauce.

How to eat?

  • Rice paper in my hometown has to be soaked in water and put on the plate for 30 seconds to make it soft.

  • Top with vegetables and a piece of grilled catfish, then roll it up.

  • Dipping sweet and sour ginger fish sauce. I'd like to invite you to join me for dinner.
