Grilled Barracuda (Pickled Pepper Flavor)

Today I bought a new oven and said for grilled fish, what fish would you like to eat? My husband and son ordered at the same time, one said crucian carp and the other said barracuda. Good! I did both, which tells me to be in a good mood today!

Ingredients list

One barracuda 1000g , Wine right amount , 40 grams of water , Peanut oil the right amount , White sesame seeds right amount , Cooked peanuts to taste , Salt right amount , Hot pepper face right amount , Appropriate amount of pepper noodles , Pepper right amount , Cumin powder to taste , Sugar and a small amount , Octagonal two , Lettuce a small root , Carrot 1 , 6 tender fresh bamboo shoots , Yam half root , Cucumber 1 , Amount of green pepper , A spoonful of watercress sea pepper , Pickle, ginger foam, foam wild salamanders amount , Oyster sauce right amount , Chicken appropriate amount , Appropriate amount of shallots , Garlic slices right amount , Celery diced moderate amount , Right amount of coriander , one Onion

Cooking steps

Break the back of the barracuda and wash with a few knives on both sides, add salt, cooking wine, and ginger slices and let stand for 10 minutes. Then, after washing and dripping dry water, evenly spread salt, pepper noodles, sea pepper noodles, pepper noodles, cumin powder, and sugar on the inside and outside of the fish, and marinate for two hours.

Wash all seasonings and vegetables, cut them well and set aside. The bamboo shoots can be washed and boiled and cut into small pieces

Make sauteed sesame oil. After the peanut oil is cooked, add star anise, ginger, spring onion and pepper to sauté until fragrant. Discard the condiments and save the oil. Pour into a small bowl for later use.

Spread tin foil on the baking tray, brush with a layer of oil that was just sautéed, spread the fish belly of the bobbin side down on the tin foil, and then brush the sauteing oil all over the fish. Put it in the middle of the oven and heat up and down at 220 degrees for 30 minutes. Brush the oil halfway.

Pour peanut oil in the wok (it can be a little more than usual for cooking). After the oil is cooked, add ginger onion, garlic, green pepper, soaked ginger, sea pepper, soaked wild pepper, watercress, and stir fry. Stir-fry, add onion at the end, add salt and cumin powder and stir-fry evenly, add a small amount of water, and simmer for a few minutes.

After the fish is roasted for 30 minutes, take it out, spread the fried vegetables evenly on the fish, and pour the thick soup and oil into the roasting pan.

After roasting, take out and sprinkle with cooked peanuts and cooked sesame seeds, and start! I can't see the fish at all, it's really hidden!

Tips
