Low carb dessert with cream, nuts & berries

Hi everyone,

Ever since I switched to keto diet combined with intermittent fasting, I began paying more attention to what I eat and prepping my own meals became my daily ritual. Because on keto you're restricted to low carb foods, diversifying the meals is of a great importance. Eating the same meal everyday can become boring, but more importantly can lead to some nutrient deficiencies. Consuming different varieties of foods also helps challenging your gut microbiome. When I'm prepping my meals, I'm trying to pack them with as much vegetables as possible alongside with a reasonable amount of protein and healthy fat foods.

There's however one dish that I don't seem to get bored with. That is a low carb, high fat dessert, which can be prepped within 5 minutes. It's calorie dense, actually healthy & tastes great :)

Ingredients (1 serving)

25g of 36% heavy whipping cream
25g of mascarpone cheese
5g of almond crumbs
5g of coconut shreds
10g of peanut butter (crunchy or smooth)
small portion of your favorite nuts (I use pecan, macadamia or hazelnuts)
small portion of your favorite berries
a pinch of cinnamon (or depending on your liking vanilla or cocoa)

I also add about 10g of coconut oil and 5 - 10ml of MCT oil, but perhaps you wouldn't want to add this much fat if you're not on keto :)

Preparation

Mix whipping cream with mascarpone cheese (additionally add coconut oil & MCT oil) and peanut butter. Once the butter is spread more or less evenly, add almond crumbs and coconut shreds. Stir. Then top if with your favorite nuts & berries. Finnish of with a pinch of cinnamon/vanilla/cocoa. Voila! The dessert is ready to be consumed :)

Macros in 1 serving (~ 100 grams)

Calories 380
Fats 35 g
Carbs 8g
Protein 8g

With coconut & MCT oil total fat amount would equal to around 50 grams (~ 520 calories total per serving).
