Cassava Fritters ..... A Filpino Merienda (Snack)

Hello everyone!

Hope all of you are safe in your part of the world.

We are still under a strict lockdown and couldn´t go out to go food shopping, unless a family is represented by one member who gets the pass to go out of our area.. The fresh market near us is open but we dare not go out because the fear is really enorm.

And so our fresh vegetable or fish are being delivered to our door by a friend who has a stall in the fresh market. We are also given relief goods by our Barangay Captain, who takes care of the distribution of all free goods such as rice, canned goods and sometimes fresh fish.

And so we have to ration our food as they are very limited... In the Philippines, we have snack time which is normally at between 3:00 - 4:00 PM although this is not compulsory but sort of a tradition.. Before the quarantine period, it is common to buy snacks from vendors along the street particularly when there are so many people passing by.

Cassava Fritters

Today, I am showing you a snack that I make... it is delish and we love it crispy
and sweet . And mos of all, it is very easy to prepare and you do not need so plenty of ingredients....Below is my recipe

Ingredients:
(Good for 3-4 Fritters
)

1 kg cassava root crop
1 can condensed milk ( small size can)
1 egg
butter or cooking oil

Preparations:

1... Peel the cassava

2...Grate them

3... Either squeeze with your hands or use cheesecloth or a clean kitchen cloth to extract the liquid.

4... Add the condensed milk.

5... In a bowl, beat the egg

6... Add the egg into the grated cassava

7... Combine the egg and the cassava with the condensed milk so that all are well blended.

8... Heat a pan with a small amount of cooking oil.

9... Fry about two spoons of the mixture , flatten it to make it a bit rounder on the surface of pan, cover for about a minute, then turn the sides and fry until both sides are golden brown in color.

That´s all there is to this recipe... You should try this and enjoy its goodness! Serve hot as a snack.
