The lockdown is already taking so long but we have to be patient and want to avoid going out for our safety. In times of a crisis where we are still confined to a quarantine, the fresh food that we prepare daily are being delivered right on our door.
We are also receiving relief goods from our baranggay, which is the smallest form of government in our country. So much for the virus, below is what I thought I´d share here.... which is a different Spring rolls.
Raw papaya fillings....
Today, I have a different kind of filling for the spring rolls, the green/raw papaya. Papayas grow well in the Philippines. It is actually a tropical plant that grows clusters of papaya fruits in one tree. There are various papaya sorts..in this simple recipe, I used the elongated one which is raw and still green.
Spring Rolls With Papaya Fillings
Ingredients:
1 small green (raw) Papaya
1/4 kg ground pork
1 onion
2 eggs
salt
pepper
2 teaspoon soy sauce
about
20 pieces spring roll- wrapper
cooking oil
Preparations:
1... Peel, remove the seeds and grate the papaya...make about two cups. Dice the onion
Mix all ingredients in a bowl, stir with a spoon until all are well blended.
Season with salt and pepper, add 2 teaspoon soy sauce, mix well.
Fill each wrapper with 1 tablespoon of the meat mixture and roll, fold both sides before completely rolling each.
In a hot wok or casserole, deep fry each piece turning sides a couple of times , lower the heat to medium so the pieces do not get burn.
and fry pieces for approximately 5 minutes.
When the pieces become golden brown in color, transfer to a platter lined with paper towel so the oil is easily absorbed. Serve hot.
Note:
It is best when the papaya is still green because it is firm and blends well with the egg and the ground meat.
