Delicious Duck Egg Curry - Bengali Style

Although I'm not an expert cooker, but, sometime I try my best to prepare any simple but delicious dish. "Egg Curry" is one of my favourite dish. As I am a Bengali so I like spicy food, and for this reason I made this dish much spicy.

Ingredients

  1. Duck Eggs - 6
  2. Potatoes - 4
  3. Onions - 2
  4. Green Chilies - 6
  5. Turmeric Powder - 2 tablespoons
  6. Cumin Powder - 2 tablespoons
  7. Garam Masala - 2 tablespoons
  8. Bay leaves - 2
  9. Kashmiri Red Chili Powder - 3 tablespoons
  10. Ginger Paste - 2 tablespoons
  11. Garlic Paste - 1 tablespoon
  12. Whole Cumin Seeds - 1 tablespoon
  13. Whole Black Cumin Seeds - 1/2 tablespoon
  14. Dry Mango Powder - 1/2 tablespoon
  15. Mustard Oil - 4 tablespoon
  16. Salt - as needed

Cooking Method

(i) Do full boil eggs & peel the shells carefully.

(ii) Take another pot & do half boil potatoes, peel them & cut in cube.

(iii) Slice onions. Take a mixi & blend ginger and garlic separately; make paste.

(iv) Take a pan, pour oil & put cumin seeds, black cumin seeds, sliced onions, garlic & ginger paste. Lower the flame.

Add onions, ginger paste, garlic paste

(v) Add 1 tablespoon of turmeric powder, cumin Powder & Kashmiri red chili powder.

(vi) Pour a little water, add a pinch of salt & keep the flame lowest. Wait 2-3 minutes.

(vii) Now, add green chilies, boiled potatoes & eggs. Add 1 tablespoon of turmeric & cumin powder. Fry until potatoes & eggs turn to golden colour.

Fry until eggs & potatoes turn to golden colour

(viii) Pour sufficient water, add bay leaves, 2 tablespoon Kashmiri red chili powder & garam masala. Set flame at medium state. Cook for 2 minutes. Now, add 1/2 tablespoon dry mango powder. Add salt as needed. Cover the pan with lid. And cook it for at least 15 minutes.

(ix) After 15 minutes put off the lid & taste it. Your favourite "Egg Curry" dish is almost ready.
