Crunchy Munchies - Broccoli Cheese Bites (Mordiscos de Brocoli)

Hola Hivers!

Do you like broccoli, this green veggie that looks like a mini-tree? We do! It was my son’s favorite veggie when he was growing up. And it still is! We all love it - steamed broccoli, plain or buttered on a plate of white rice and chicken_ teriyaki_. For a working mom at the time, what’s not to like? It is easy to prepare and it’s healthy! It is also available year-round cause it is grown locally in southern California.

We have another favorite recipe for broccoli - this one is just for snacking and munching in between meals. It’s breaded broccoli infused with grated cheese - either cheddar or parmesan - and baked to a perfect crunch. It takes about 25 minutes to bake in the oven (or just 10 minutes in the air-fryer if you have one; this new kitchen gadget works wonders!). It is served with ketchup, ranch, or whichever dip you fancy.

Crunchy Broccoli Bites Recipe

This is the basic recipe we follow to prepare one batch of broccoli bites. Depending on what we have in the fridge at prep time, it can be a broccoli-cheddar or broccoli-parmesan. Either way, it is an easy one to whisk, it’s delicious and of course, it’s nutritious. It’s broccoli - packed with antioxidants, fiber, vitamins, and minerals!

Ingredients

1 large bunch of broccoli florets
2 large eggs
1/2 cup regular breadcrumbs or Panko
1 cup parmesan or cheddar cheese, shredded
2 tbsp flour
1/2 tsp lemon juice
1/4 cup spring onion, diced
2 tbsp garlic, minced
1/4 tsp ground pepper
1/2 tsp salt
Olive oil

Directions

  1. Wash the broccoli and cut it into florets.
  2. In a pot of boiling water, steam the broccoli florets in a steamer basket for 5 minutes until soft; rinse the florets in cold water to stop the cooking.

    3. Finely chop the broccoli florets.

      4. In a mixing bowl add the eggs, parmesan cheese, breadcrumbs, flour, garlic, onion, salt, and pepper. Mix thoroughly with a spoon.

        5. Add the minced broccoli and squirt the lemon juice. Mix evenly.

          6. Meanwhile, preheat the oven to 375F.
            7. Using a mini muffin pan, brush the wells with olive oil; scoop the broccoli mixture into the wells.

              8. Bake at 375F for 25 minutes until lightly brown on the edges and top.

              If you’re not using a muffin pan, use a baking sheet and spoon large dollops of the broccoli mixture into the pan. Flatten with a spoon into a small patty. Bake at 400F for 10 minutes then turn over for an additional 10 minutes. This will make for crispier broccoli bites.

              Serve with or without your favorite dipping sauce.
