Adobo is a favorite Filipino dish. It's main ingredient is soy sauce and others are vinegar, pepper, garlic, onion, salt, and bay leaf. Of course, don't forget the meat! You are not making Adobo Soup and there's no such thing. Lol. And please don't confuse it with "Adobe". Hehe!
The most popular adobo is probably Chicken Adobo because it's on Apl De Ap's song "Bebot":
"Yung kanin, CHICKEN ADOBO
Yung balot, binebenta sa kanto
Tagay mo na nga ang baso
Pare ko inuman na tayo"
BUT there are also other meats cooked in Adobo, some of it are pork, beef, fish, water spinach, string beans, etc. There are tons of foods you can cook in adobo.
Another example of adobo dish, as you can see on the photo above, is the Adobong Pusit or Squid Adobo. The soup appears darker than the usual adobo dishes because of the squid's ink.
Since I am scared of the appearance of most parts of the squid, I only eat those cut in rings. Lol! We ate it with fried rice and had diced mango and tomato on the side. Delicious!
Squid Adobo is also a popular dish in the country but you will most likely not see it being sold on "karinderya", an eatery for the masses, because squid is more expensive than meat. It's better for you to cook at home or you can go out and dine at a Filipino restaurant. There are also squid adobo in can sold at groceries but I don't know if they taste good.
